This roasted tomato aioli is so worth the effort! It’s a great condiment to keep on hand year round! The aioli is great on any sandwich or burger. However, you can also treat yourself by using it as a decadent dip!

You won’t believe how easy it is to make. This aioli recipe is extra flavorful since we start by roasting the tomatoes. Plus, it really kicks the aioli up a notch!

Tomatoes are tossed in olive oil, garlic and diced red onion. They are then roasted in the oven. In a food processor (or a large bowl using an immersion blender), blend the roasted tomatoes, mayo, hot sauce, sherry vinegar and smoked paprika until smooth.

Aioli is a garlicky mayo that can be used as a spread, dip or sauce. You can even use it to drizzle over soup, stew, roast or mixed with pasta. While traditional aioli is made from scratch, this simple recipe blends together tomatoes, garlic, red onion and spices to bring in more flavors that are delicious.

We recently used this Tomato Aioli in our Crab Cakes recipe for a party (as we were out of mayo) and they turned out fabulous. Definitely worth a try!

What ingredients are in tomato aioli?

  • NatureSweet Glorys® Tomatoes
  • olive oil
  • red onion
  • garlic
  • smoked paprika 
  • mayonnaise
  • hot sauce
  • cumin
  • chipotle chili powder
  • white wine vinegar
  • Salt and pepper to taste

Is aioli basically mayo?

Traditional aioli is made from garlic and olive oil. And mayo is made from egg yolks and canola oil. Both result in a creamy sauce, but they each have their own distinct flavors.

How to Make Tomato Aioli

Step 1 – First, preheat the oven to 350°F.

Step 2 – Prep the baking sheet. First, arrange NatureSweet Glorys® (whole or halved) on a shallow pan with onion chunks. Next, add 6 garlic cloves with skins still on. Then, drizzle with 1-2 tablespoons of olive oil over the pan and sprinkle generously with salt and freshly ground pepper. You can also add 4 sprigs of thyme over the top.

Step 3 – Bake. Cook in the oven for 1 hour or until tomato skins are wrinkled and soft. Then, let cool. If using heads of garlic, squeeze the soft garlic out of its skin.

Step 4 – Blend. In a food processor, blend the roasted tomatoes/garlic/onion, all seasonings (paprika, cumin, chipotle chili powder), mayonnaise, hot sauce and white wine vinegar. Process the mixture until smooth. You may have to scrape down the sides in between pulses. Finally, season with additional salt and black pepper if necessary.

Step 5 – Refrigerate. Cover and refrigerate at least 30 minutes or overnight for all the flavors to meld together.

  • 1 Food processor or immersion blender

Ingredients 

  • 2 10 oz. containers of NatureSweet Glorys® whole or halved
  • 1 medium Red Onion cut into 2-inch chunks
  • 6 cloves Garlic
  • 2 Tbsp Olive Oil
  • Kosher Salt and Freshly Ground Black Pepper to taste
  • 1 1/2 Tbsp Smoked Paprika
  • 1//2 tsp Ground Cumin
  • 1 tsp Chipotle Chili Powder
  • 3/4 cup Mayonnaise
  • 4 dashes of Hot Sauce add more if you want more heat
  • 1 splash White Wine Vinegar

Instructions 

  • Preheat oven to 350°F.
  • Arrange cut NatureSweet Glorys® on a shallow pan with onion chunks. Add 6 garlic cloves with skins still on.
  • Drizzle with 1-2 tablespoons olive oil over the pan and sprinkle generously with salt and freshly ground pepper.
  • Cook in the oven for 1 hour or until tomato skins are wrinkled and soft. Let cool.
  • Squeeze the soft garlic out of its skin.
  • In a food processor, blend the roasted tomatoes/garlic/onion, all seaonsings (paprika, cumin, chipotle chili powder), mayonnaise, hot sauce and white wine vinegar.
  • Process the mixture until smooth scraping down the sides in between pulses.
  • Season with additional salt and black pepper if necessary.
  • Cover and refrigerate at least 30 minutes or overnight for all the flavors to meld together.
