Tips For Making Broccoli Cheese Sauce

  • Ensure that the roux (butter and flour), are combined and that the flour bakes off for a minute or two. Otherwise, your cheese sauce will taste like flour.
  • Next, when adding the milk, be sure to whisk! You can’t over whisk here. This is what will leave you with a smooth and creamy consistency.
  • It is super important to remove the pan from the heat when adding in the Velveeta. You want the milk mixture to be warm, not scolding hot.

How to Make Cheese Sauce For Broccoli

Begin by making a roux. A roux is melted butter and flour mixed together until it’s thick. It’s almost like a paste and thickens the cheese sauce. Melt the butter in a medium saucepan over medium heat. Once the butter has fully melted, add in the flour and combine. Cook for about a minute or two to let the flour cook off.

While constantly whisking, add the milk slowly into the saucepan. Continue to whisk over medium heat for 3-5 minutes until the mixture becomes thick.

Remove from the heat and add in the Velveeta, garlic, salt and pepper. Continue whisking until the Velveeta has completely melted and you have a smooth consistency.

How To Store Leftover Cheese Sauce

Fair warning, you do not want to freeze cheese sauce. When thawed and reheated, the texture will become a grainy, sandy consistency.

To ensure a smooth consistency, store in an airtight container or mason jar in the refrigerator for up to 7 days. To reheat, place in a medium saucepan and heat over medium-low heat. You may need to add a few tablespoons of milk to loosen up the sauce.

  • ½ tsp Kosher salt
  • ½ tsp Black ground pepper
