Patatas Bravas Sauce is a simple and easy red sauce recipe that is perfect drizzled over the top of fried potatoes, topped on fish or chicken. There’s really no wrong way to enjoy this delicious condiment!
What is Bravas Sauce?
This sauce is a red sauce that is slightly spicy. It’s made with simple ingredients like olive oil, smoked paprika and tomato paste. The flavors are not a spicy hot, but more of a warmth heat from the smoked paprika and can be adjusted for your families’ palate.
The consistency of the bravas sauce should be smooth and creamy. It’s a sauce that is perfect for drizzling! It is most commonly used for Patatas Bravas.
Can I Make Bravas Sauce Ahead of Time?
Absolutely, yes! If you are serving this sauce with Patatas Bravas, making this sauce the day ahead of time will save you some much needed time.
Simply make it a day in advance, store in a mason jar and reheat when you are ready to top your fried potatoes!
Recipe Tips
- This is a smooth red sauce, there shouldn’t be any chunks within the sauce.
- Whisk! To ensure a smooth sauce, you can’t over whisk! This step is important when adding the flour to the oil as well as slowly incorporating the vegetable broth.
- The level of smokiness is up to you! We have a base, but use as much or as little of the smoked paprika and crushed red pepper flakes.
Ingredients Needed To Make Bravas Sauce
- Extra virgin olive oil
- Garlic
- Tomato pasta
- Smoked paprika
- Crushed red pepper flakes
- Flour
- Vegetable broth
- Red wine vinegar
- Salt and pepper to taste
How To Make Patatas Bravas Sauce
In a medium sized pan or skillet, heat 1/3 cup of olive oil over medium heat. Add in the crushed garlic cloves and cook for about 2 minutes or until golden brown. Remove the garlic cloves and set aside.
Lower the heat and whisk in the flour until smooth and the consistency has thickened. Add the tomato paste, smoked paprika and red pepper flakes, stirring until combined.
Slowly begin to add the vegetable broth and whisk until smooth and fully incorporated. Whisk in the red wine vinegar and remove from the heat.
Transfer the Patatas Bravas sauce to a bowl, mason jar or drizzle onto your Patatas Bravas.
How To Store Bravas Sauce
Be sure to allow the sauce to cool completely. Then transfer for a mason jar or an airtight container and store in the refrigerator for up to 5 days.
To reheat the sauce, pour into a saucepan over medium heat and whisk with a tablespoon of water or vegetable broth until you reach the right consistency.

- 1 teaspoon crushed pepper flakes more or less to your liking
