What kind of crab is best?
If you can find blue crab meat in your grocery store, that is best. However, we are in the midwest and can’t get fresh crab like our friends in Maryland can! For this crab cake recipe, we used claw crab meat. If that isn’t an option, you can used the can lump crab meat. However, if you use the crab in a can version, be sure to squeeze any extra moisture out of the crab meat before mixing it in with the other ingredients.
Why won’t my patties hold together?
Too much moisture is the main reason why crab patties fall apart or won’t hold together. Make sure there is no add-moisture before you mix it in with the rest of the ingredients. Be sure all the added-moisture is out of the crab before you mix it in.
Another tip here is to freeze your crab cake patties for 15-20 minutes before cooking to ensure the crab cakes stay together. You can also form into a ball and compact the crab cakes before you form them into patties.
Is it better to fry or bake crab cakes?
We like using the blackstone. However, if you don’t have a Blackstone or afraid your crab cakes will fall apart when flipping, the safer choice is to bake them. I have also made them in the air fryer. This will give you several options on how to cook them to your preference.
How to Bake Crab Cakes
Preheat the oven to 450 degrees.
Make the crab cakes as instructed below in the recipe card.
Place on a baking sheet, and bake for 12-14 minutes.
How to Air Fry Crab Cakes
Again, make your crab cakes as instructed below in the recipe card.
Place the patties in the freezer for 15-20 minutes to allow them to firm up a bit. This is a great trick when air frying crab cakes.
Place 4 patties in the bottom of a pre-greased air fryer basket.
Set the air fryer to 370 degrees, and cook for 7-8 minutes, flipping half way through.
Ingredients Needed To Make Crab Cakes with celery
- 1/3 C Mayonnaise
- 1 Large Egg, Beaten
- 2 tbsp Dijon Mustard
- 2 tsp Worcestershire Sauce
- 1/2 tsp Hot Sauce
- 8 oz Crab Meat
- 3/4 c Panko Bread Crumbs
- 2 tbsp Parsley, Chopped
- 2-4 Dandy® Celery sticks, diced
How do I make Crab Cakes?
In a large bowl, mix together the mayo, beaten egg, dijon mustard, worcestershire sauce and hot sauce.
Next, add in the crab meat, panko, parsley and Dandy® celery.
Divide your patties into 8 equal sections while still in the bowl. This ensures that every patty is the same size. Shape and create your cab cakes!
Once the patties are formed, place in the freezer for 15-20 minutes so that the crab cakes firm up. This is also a trick so that they don’t fall apart.
Finally, pour oil down on your blackstone, griddle or skillet.
Cook for 3-4 minutes on both sides ensuring you get a nice crust.
Serve and enjoy!
