Tips & Substitutions for Your Hot Honey Roasted Tomatoes:

  • Hot Honey: If you don’t have hot honey, you can make your own! Simply warm regular honey with a pinch of red pepper flakes (or more, depending on your desired spice level). Alternatively, use regular honey and add a dash of cayenne pepper or a sprinkle of chili flakes to the tomatoes before roasting.
  • Mozzarella: Fresh mozzarella pearls are perfect, but you can also use small cubes of fresh mozzarella or even crumbled feta cheese for a saltier, tangier kick.

Ingredients for Honey Roasted Tomatoes:

  • 1 pint NatureSweet Glorys® cherry tomatoes
  • 1 tablespoon olive oil
  • 3 tablespoons hot honey (adjust to your spice preference)
  • ½ cup mozzarella pearls
  • ¼ teaspoon fresh thyme (optional, but highly recommended!)
  • Salt, to taste
  • Black pepper, freshly ground, to taste
  • Optional: ½ small red onion, thinly sliced (if you’d like to add a savory depth)

Roasting Your Perfect Tomatoes

Preheat Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or use a nonstick baking sheet for easy cleanup.

Toss & Season: In a medium bowl, combine the NatureSweet® Glorys® cherry tomatoes. Drizzle them with olive oil and hot honey. If using, add the thinly sliced red onion to the bowl. Toss gently to ensure all the tomatoes and onion are well coated.

Arrange on Baking Sheet: Pour the tomato and onion mixture evenly onto your prepared baking sheet. Spread them out in a single layer so they can roast evenly.

Roast to Perfection: Place the baking sheet in the preheated oven and roast for 15-20 minutes. Keep an eye on them; the tomatoes are ready when they have softened and beautifully burst, releasing their juicy interiors.

Serve & Finish: Carefully pour the hot roasted tomatoes (and onions, if used) into a serving bowl. Immediately add the fresh mozzarella pearls. The residual heat from the tomatoes will slightly melt the cheese, making it wonderfully gooey. Sprinkle with fresh thyme (if using), and season with salt and freshly ground black pepper to taste. Serve warm and enjoy!
