Savory NatureSweet Glorys Quick Bread and Chia Jam

Making NatureSweet Glorys Quick Bread and Chia Jam is easy. It’s one-of-a-kind flavor will be ready to enjoy in no time! Unlike traditional breads, quick breads don’t use yeast or sourdough starters as leavening agents. They also don’t require a carefully-controlled climate or baking process, meaning they’re much easier to make. Though they’re all completely different, cornbread, banana bread, brownies, and cookies are all forms of quick bread.

A fresh, quick, delicious bread loaf

We used NatureSweet Glorys in this quick bread along with asiago cheese for a rich and savory delight. Basil and garlic come along for added flavor. While it’s great to eat it by hand, try slicing it up and toasting it or using it as sandwich buns. We love it with some fresh deli salami – and more asiago cheese, of course!

But in our opinion, this bread is at its best with chia jam. This isn’t your typical jam — cayenne, onion, garlic, and lemon give it a zesty kick while NatureSweet Glorys and maple syrup provide a balancing sweetness and texture. Chia seeds add a boost of nutrition, too!

NatureSweet Glorys Quick Bread & Chia Jam

Ingredients 

Glorys® Quick Bread

  • 3 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 20 oz NatureSweet Glorys® diced
  • 1/4 cup packed fresh basil finely chopped
  • 2 cloves garlic minced
  • 2 large eggs lightly beaten
  • 1/3 cup extra virgin olive oil
  • 1/2 cup milk
  • 1 + 1/4 cups asiago shredded cheese divided

Glorys® Chia Jam

  • 20 oz NatureSweet Glorys®
  • 1/4 cup white onion finely diced
  • 2 cloves garlic minced
  • 1/2 lemon juiced and zested (about 1 tbsp)
  • 2 tbsp good quality balsamic vinegar
  • 1 tbsp pure maple syrup
  • 2 tbsp chia seeds
  • Pinch of cayenne

Instructions 

Glorys® Quick Bread

  • Preheat the oven to 350ºF. Spray a loaf pan with nonstick spray.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
  • In another large bowl, toss together the tomato, basil, and garlic. Add the eggs, olive oil, and milk. Toss again to coat everything.
  • Pour the wet ingredients into the dry ingredients and stir until mostly combined. Add 1 cup of the cheese and continue to stir until everything is evenly dispersed. Batter will be thick.
  • Pour the batter into the prepared loaf pan. Spread evenly with a spatula and sprinkle the remaining 1/4 cup of cheese on top of the batter.
  • Bake loaf for 55-60 minutes (check with inserting toothpick in the center - it will be done when the toothpick comes out mostly clean). Allow to cool in the pan at least 15 minutes before removing and serving warm. Loaf freezes well, up to 2 months. Thaw in the refrigerator overnight.

Glorys® Chia Jam

  • Over medium heat, in a large sauté pan, sauté onions and garlic for 2-3 minutes.
  • Add the Glorys®, lemon juice and zest, balsamic vinegar, and maple syrup. Cook on medium heat about 10-15 minutes until most of the liquid has cooked off.
  • Stir in the chia seeds and cayenne, if using and remove from heat.
  • Allow to cool and place in airtight jars. Place in the refrigerator to chill and thicken for several hours overnight.
