Weโ€™ve all been there: you buy one of those big, beautiful bags of bright, multi-colored sweet mini peppers with the best of intentions. They’re perfect for school lunches, quick dinners, and healthy snacking. But life gets busy, and suddenly you notice that bag sitting in the crisper drawer, starting to lose its crunch. Donโ€™t fret!

If you’re wondering how to save those colorful little gems before they spoil, you are in the right place! Let’s talk about how to keep them fresh and how to store them for later so nothing goes to waste.

About Sweet Mini Peppers

Sweet mini peppers are like the gentle, bite-sized cousins of the standard bell pepper. They come in bright shades of red, orange, and yellow, and they are packed full of vitamins A and C.

What makes them a favorite for families is their mild, sweet flavor and their nearly seedless interiors. They add a wonderful pop of color to any plate. Plus, they are incredibly easy to prep, making them a total lifesaver on busy weeknights!

Sweet Mini Peppers Raw

When they’re fresh, eating sweet mini peppers raw is an absolute delight. Because they have a thinner skin and fewer seeds than larger peppers, you can often just wash them and bite right into them.

They are incredibly crisp and naturally sweet, which makes them a fantastic, kid-friendly alternative to chips when paired with a little ranch, hummus, or your favorite veggie dip.

However, if you bought a large pack and know you won’t be able to finish them raw while they’re at peak crispness, freezing them is the absolute best way to lock in their flavor.

How To Freeze Sweet Mini Peppers: Step-by-Step

Freezing mini peppers is incredibly simple. And the best part is that you don’t even have to blanch them (boil them briefly) first! Because freezing naturally changes the texture of vegetables, frozen peppers will lose their raw, crunchy bite once thawed. However, they will keep their beautiful color and sweet flavor perfectly for cooking.

Here is the simple, stress-free process to freeze your mini peppers:

Step 1: Wash and Thoroughly Dry

First, wash the sweet mini peppers thoroughly under cool water. Make sure to dry them completely with a clean towel. Any leftover moisture will turn into ice crystals in the freezer.

Step 2: Remove Stems and Slice

Then, cut off the stems and pull out any stray seeds. Slice or chop the peppers into rings, strips, or dice according to your preference and how you plan to use them later.

Step 3: Arrange On A Baking Sheet

Then, lay the prepared mini peppers on a baking sheet covered with parchment paper in a single layer. Make sure the pieces arenโ€™t touching each other so they don’t stick together.

Step 4: Flash-freeze

Place the baking sheet flat in your freezer. Flash-freeze them for about 1 to 2 hours until the individual pieces are completely frozen solid.

Step 5: Package & Seal and Label & Store

Transfer the frozen pepper pieces into airtight freezer bags or containers. Press out as much air as possible before sealing to prevent freezer burn. Finally, label the bags or containers with the date. Pop them back into the freezer, where they will stay delicious for up to 6 to 8 months!
