A hearty bowl of soup is the perfect dish for a cold winter day. And there are few soups that can beat our favorite, stuffed pepper soup! This recipe is easy to make and even easier to love. Throw everything in the pot then simmer until tender – voila! Deliciousness awaits you!

What is Stuffed Pepper Soup?

Stuffed pepper soup is all of your favorite flavors of stuffed peppers together in a delicious soup. This tomato based soup has ground beef combined with pepper and rice. It uses the same seasoning as the traditional recipe making this dinner perfect.

How to Store Leftovers

This is one of those soups that tastes even better the next day. Use it for dinner the next night or for lunch over the next few days. Once the soup cools, store it in an airtight container and place it in the refrigerator.

I prefer to store the rice and soup separately so that the rice does not absorb all the liquid of the soup.

To reheat the leftovers, add the rice and soup into a pot. Heat it together until it is heated.

The stuffed pepper soup will last for about 3 days in the refrigerator.

Can You Freeze Stuffed Pepper Soup?

I love freezing soup. it is a great way to have soup on hand all the time. If you are freezing this soup, you want to keep the rice separate from the soup. Just like when storing the soup in the refrigerator, if the rice is stored in the soup, it will absorb the liquid.

The soup will last for about 3 months.

Variations

I love when you can make a soup your own. This soup is perfect for that. You can change up this soup by

Change the peppers: I am using green bell pepper in this recipe. You can use other colored peppers or use a spicier pepper as well.

Make it Spicy- Add some heat, like red pepper flakes or hot sauce, to the soup. You can make it as spicy or as plain as you like.

Meat- Use a different type of meat. Switch the ground beef for ground chicken or ground turkey or even ground pork. You can also use ground sausage. Any type of ground meat will work.

Thick or Thin- You can make this more like a stew or keep it thin like a soup.

Use Cauliflower- You can use cauliflower instead of regular rice.

What to Serve with Stuffed Pepper Soup

Soup is great just the way it is and this soup has everything you need. However you can serve a few things with this soup. I like to make soup and salad. If you are just looking for side dishes, you can serve rolls or a crusty bread as well.

Ingredients

  • lean ground beef
  • bell pepper
  • onion
  • diced tomatoes
  • tomato sauce
  • beef broth
  • thyme
  • sage
  • salt
  • black pepper
  • white rice, cooked

How to Make Stuffed Pepper Soup

Step 1- Brown the beef

Brown the meat in the dutch pot. add the onion and pepper and cook.

Add the other ingredients and stir together

Step 3- Simmer

Simmer for 45 minutes.

Add the rice and cook another 5 minutes.

Ingredients 

  • 1 lb lean ground beef
  • 1 bell pepper diced
  • 1 onion diced
  • 1 15 oz can diced tomatoes
  • 2 c tomato sauce
  • 1 c beef broth
  • ½ tsp thyme
  • ½ tsp sage
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup white rice cooked

Instructions 

  • In a large pot brown ground beef.
  • Once almost cooked through add in onion and pepper, cooking until soft.
  • Add in tomatoes, tomato sauce, beef broth, thyme, sage, salt and pepper. Be sure to stir.
  • Allow to simmer covered for 30 to 45 minutes.
  • Add in rice and stir.
  • Allow the rice to heat up for about 5 minutes before serving.
  • Enjoy!
