- 2 lbs boneless, skinless chicken breasts cut into 1 inch strips
- 1 red bell pepper cut into strips
- 1 orange bell pepper cut into strips
- 2 Peri & Sons Farms Nevada Whites™ sliced
- 1 lime (juice only)
- 1 tbsp corn starch
- 2 tsp chili powder
- 1 tsp salt
- 2 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1 tsp corriander
- 1/4 tsp chipotle chili powder
- limes to garnish cut into wedges
- Preheat oven to 400 degrees.
- Combine all spices in a large mixing bowl. Add bell peppers, white onions, lime juice, and chicken. Toss until evenly coated.
- Place chicken and veggies onto a baking sheet and bake for 18-25 minutes, or until chicken is cooked through. Remove from oven and garnish with lime wedges.
- Serve with warm tortillas and pico de gallo.
