These frozen treats are the perfect intersection of a healthy snack and a DIY craft. They are cold, refreshing, and surprisingly creamy thanks to a hidden dollop of Greek yogurt. Ingredients

  • Mandarin oranges: Peeled and carefully segmented.
  • Greek Yogurt: This acts as the “glue” and adds a boost of protein.
  • Sprinkles: Use a mix of “long” (jimmies) and “dot” (nonpareils) for decoration.

Make Your Own Mandarin Butterfly

First, prep the Base. Line your sheet pan with parchment paper. Lay out your popsicle sticks with enough space between them so the wings don’t touch.

Next, form the wings: At the top of each popsicle stick, place two mandarin orange segments back-to-back. The curved edges should face outward to mimic the shape of butterfly wings.

Then, add the “glue”: Dollop a small amount of Greek Yogurt in the gap between the two segments. This will hold the wings to the stick once frozen.

Next, decorate your butterfly. Top the yogurt “body” with your sprinkles. Use the long sprinkles at the top to create tiny antennas!

Finally, freeze. Pop the tray into the freezer. Let them set for approximately 1-2 hours until the yogurt is firm and the oranges are chilled.

Can I use regular yogurt instead of Greek yogurt?

You can, but Greek yogurt is highly recommended because it is thicker. Regular yogurt has a higher water content and is runnier, which might cause the butterfly wings to slide around before they freeze.

How long do these last in the freezer?

For the best texture and flavor, enjoy them within 1 week. If stored longer in an airtight container, the orange segments may become very hard or develop ice crystals (freezer burn).

Do the orange segments get too hard to bite?

Since mandarin segments are small and have a high moisture content, they freeze into a “sorbet-like” consistency. However, if you have sensitive teeth, let them sit at room temperature for 2-3 minutes before eating to soften slightly.

My wings keep falling off the stick! What am I doing wrong?

Make sure you are using enough yogurt to act as “glue.” The yogurt needs to touch both segments AND the popsicle stick. Also, ensure your tray is completely flat in the freezer.

Do I have to use popsicle sticks? 

No, you could also use lollipop sticks. You could also make them without a stick, but you will definitely want to make sure the have completely hardened in the freezer before serving!

Is there a dairy-free version?

Absolutely! You can swap the Greek yogurt for a thick dairy-free alternative like coconut cream or a thick almond-based yogurt.

  • 1/4 cup Greek Yogurt
  • Sprinkles

Instructions 

  • Line a sheet pan with parchment paper and lay out your popsicle sticks.
  • Add the top of the popsicle stick, and add 2 orange segments back to back to make the “wings.”
  • Add Greek yogurt in the gap between the 2 segments to hold everything together.
  • Top the yogurt with sprinkles (you can even add some as antennas).
