Ingredients Needed:

  • 1 cup North Bay Produce blueberries
  • 8 oz. cream cheese (softened)
  • 1 tablespoon lemon juice (about 1 lemon)
  • 1 teaspoon vanilla extract

Instructions:

Prepare the Blueberries: In a medium saucepan over medium heat, combine the fresh blueberries and lemon juice. Cook, stirring occasionally, until the blueberries soften and the juices start to bubble. This should take about 5-7 minutes.

Cool the Mixture: Remove the saucepan from heat and let the blueberry mixture cool to room temperature.

Blend the Cream Cheese: In a food processor, combine the softened cream cheese, vanilla extract, and the cooled blueberry mixture. Process until smooth and well-blended, with a bright and vibrant color.

If you don’t have a food processor, place the cream cheese and vanilla extract into a large bowl. Using a hand mixer, blend until smooth and creamy. Add in the cooled blueberries and blend until smooth. Then simply store in a container in the refrigerator until cool and firm.
