So what exactly is baked oatmeal?

Baked oatmeal is a type of oatmeal that is cooked in the oven. It is basically an oatmeal casserole. The blueberry baked oatmeal combines the oats, blueberries and egg together with maple syrup. The result is like warm cereal that can be sliced and then eaten or cold.

What Oats Should You Use?

You need to use old fashioned oats for this recipe. Make sure they are not quick oats because they are processed and will not stand up to the cooking process.

If you are looking for a gluten free breakfast, you need to make sure that the package says gluten free. Sometimes, the oats can be cross contaminated.

Can you prep this ahead of time?

This is a great recipe to make ahead. You can mix all of the ingredients together and make it the night before. The mixture can sit together for 24 hours in the refrigerator before it is baked.

How long can you keep baked oatmeal for?

This blueberry baked oatmeal will last in the refrigerator for about a week. You will need to make sure it is wrapped well or in an airtight container.

If you will not finish the blueberry baked oatmeal before it goes bad, you can also freeze it.

Can you freeze baked oatmeal?

You can freeze the leftovers of the baked oatmeal, or you can make it specifically for the freezer. Once the oatmeal is cooled, you can portion it into individual servings and freeze it for up to 3 months.   • 2 C Old Fashioned Oats
  • ¾ C Milk
  • ¼ C Chopped Walnuts
  • 2 Eggs
  • ¼ C Maple Syrup
  • 2 tsp Vanilla Extract
  • 2 tsp Ground Cinnamon
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 2 c Fresh Blueberries

How to Make Blueberry Baked Oatmeal

Step 1- Mix the oatmeal

Mix together all of the ingredients.

Be sure the eggs are broken and full incorporated.

Add the mixture into a prepped casserole pan.

Step 2- Layer the Baked Oatmeal

Add the first half of the casserole on the bottom of the dish.

Top with a layer of blueberries.

2nd layer of Blueberry Baked Oatmeal

Add the top layer of the mixture.

Top it all with more blueberries.

Step 3- Bake

Ingredients 

  • 2 C Old Fashioned Oats
  • ¾ Milk
  • ¼ C Chopped Walnuts
  • 2 Eggs
  • ¼ C Maple Syrup
  • 2 tsp Vanilla Extract
  • 2 tsp Ground Cinnamon
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 2 C Fresh Blueberries

Instructions 

  • Add the oats, milk, walnuts, eggs, maple syrup, vanilla, cinnamon, baking powder and salt. Ensure to break the eggs up first to help making incorporating the eggs easier when mixing.
  • In a 8x8 casserole dish, prep with non-stick baking spray.
  • Layer half the oat mixture into the bottom of the casserole dish into an even layer.
  • Top with half the blueberries.
  • Layer the remaining oat mixture ensure it’s even.
  • Add the last of the blueberries on top.
  • Bake at 350° for 25-35 minutes until set and golden brown.
  • Enjoy!
