Not sure how to eat an artichoke? That’s OK – you’re not alone! Rather than trying to slice right into a whole one with a knife, the way to eat an artichoke is to peel it apart petal by petal. Enjoy the stem-side of the petal by skimming the flesh lightly with your teeth. For inner petals, you may be able to eat the entire thing, especially when prepared using an Instant Pot.
How To Sautรฉ Artichoke Hearts In The Instant Pot
Sauteed artichoke hearts are a delicacy, whether they come from a jar or from a fresh choke. In our instance, we already had several hearts steamed and ready, so we’ll be using fresh ones. We’ll be using the Instant Pot to sautรฉ but you could use a regular skillet or sautรฉ pan on the stove.
You’ll first need to remove all the petals and remove the choke from the center. The easiest way to do this is to slice the artichokes lengthwise and carve out the choke with a butter knife or spoon.
How to Choose Artichokes to Buy
When you’re at the store, look for artichokes that are dark green and have tightly closed leaves. The more compact the petals the more fresh and tender the artichoke are. Avoid ones that are yellowing or have an open center. Also the artichoke should feel heavy for its size and should be firm.
Is the Center of the Artichoke Edible?
The center of the artichoke is technically edible, but it can be tough, so you do not want to eat it. That’s why it’s important to remove the choke before cooking. The choke is the inedible, hairy part of the artichoke that covers the heart.
How to Store Sauteed Artichokes
Once the artichokes are cooled, place them in an airtight container in the refrigerator. The artichokes will last for about 3 days when stored properly.
How to Serve Sauteed Artichokes Hearts
Serve sauteed artichokes hearts as is or with a dipping sauce on the side. We like to serve them with a lemon aioli or garlic mayo. Of course, a butter or garlic infused butter will taste great.
Serve the artichokes as a side dish to your favorite dinner recipes. I love to serve it with chicken. It goes well with fried chicken, baked chicken or even sauteed chicken. Sauteed artichokes is also great with pork and beef. I love to use this as a side dish for steak too. This will also great great with pasta and seafood.
How to Make Sauteed Artichokes
Add 1 tablespoon of butter or olive oil to the Instant Pot and set it to Sautรฉ. Add chopped garlic and cook for 1 minute, stirring constantly.
The garlic will infuse the butter with rich garlic flavor. When the minute is up, add the artichoke hearts and cook for another 5 minutes, stirring occasionally. The hearts should brown slightly around the edges.
Sprinkle lightly with sea salt and serve these artichoke hearts as a side dish. They offer a mild, nutty flavor akin to broccoli or asparagus. A delicacy like this fits right in on special occasions, like Easter dinner.

- 2 cloves Garlic chopped
- 1 tbsp Olive Oil or Butter
- 1 pinch Sea Salt to taste

- Remove all the petals and the choke from the center of the artichokes.
