Charred Sweet Broccoli with Pancetta and Parmesan
Ingredients
- 2 bunches Tanimura & Antle Artisan® Sweet Broccoli cut to 3” pieces
- 1/4 cup shredded parmesan cheese
- 6 slices pancetta cut into 1/4-inch pieces (or substitute bacon)
- Salt and ground black pepper
For the dressing:
- 1/2 cup white balsamic vinegar
- 1 tbsp mustard seeds
- 1 tsp crushed red pepper flakes
- 2 tbsp sugar
- 1 tsp fresh thyme leaves roughly chopped
- 4 tbsp olive oil
Instructions
- Cook the pancetta or bacon in a skillet over medium heat until golden brown.
- Drain on paper towels, set aside skillet and remaining fat for cooking the Artisan Sweet Broccoli.
- In a small bowl, whisk together white balsamic vinegar, mustard seeds, red pepper flakes, sugar, thyme leaves and olive oil.
- In the skillet with reserved fat, over medium-high heat, cook Artisan Sweet Broccoli, turning every 1-2 minutes until charred and soft. Season with salt and pepper.
- Add Artisan Sweet Broccoli to medium serving bowl.
- Sprinkle cooked pancetta or bacon and parmesan over the Artisan Sweet Broccoli.
- Serve to plates and then top with dressing as desired.
