Patatas Bravas is a comfort food that starts with fried potatoes and is topped with a delicious red sauce. Crispy hot patatas bravas are traditionally served in tapas bars throughout Spain. However, we want to show you how easy it is for you to make them at home!

You can’t go wrong when it comes to enjoying comfort food like potatoes. However, Spanish patatas bravas take fried potatoes to a whole other level in part to the spicy red bravas sauce! The potatoes are fried and crispy on the outside but soft on the inside. We can’t wait for you to try this delicious dish at home.

What Are Patatas Bravas?

You may have never heard of Patatas Bravas, but that is okay! This side dish is served in restaurants and bars all throughout Spain. The potatoes are diced into 2″ cubes, fried in oil and served warm with a spicy Patatas Bravas sauce.

This dish can be as an appetizer to share with friends or served with grilled fish or chicken and served with a green salad for a complete meal.

Recipe Tips

  • You can place the potatoes in the refrigerator over night if you wish after boiling. It’s important that the potatoes are completely cool before frying them. This is super important when it comes to the frying process.
  • Choose a potato that is high in starch like Wada Farms Russet Potatoes. Gold or red potatoes would also work well.
  • Be sure to par-boil your potatoes (boiling potatoes in water with baking soda) as this breaks down the pectins of the potato so that the starch is released and gives the potatoes a crispy layer once you fry them.

Ingredients Needed To Make Patatas Bravas

  • Baking soda
  • Wada Farms Russet Potatoes
  • Kosher salt
  • Olive oil

How to Make Patatas Bravas

Start by washing and cleaning your potatoes. Once they are peeled, cut into 2″ pieces.

Par-boiling the potatoes – fill a medium saucepan with water and bring to a boil. As soon as the water comes to a rolling boil, add in the baking soda.

Produce Moms’ TIP: the water may foam a little and that’s perfectly fine. Add in the potatoes and allow to return to a boil. Boil the potatoes for 1-2 minutes and then drain.

Transfer the potatoes to a large sheet pan and season with kosher salt, tossing together to ensure the salt is evenly distributed amongst the potatoes. Set aside and allow to cool completely.

In a medium skillet, heat 1 cup of oil over medium-high heat. Once the oil begins to bubble, gently add in the potatoes, be sure not to overcrowd the skillet as this will need to be done in batches. Cook the potatoes in the oil until they are golden brown on all sides, about 20-25 minutes. Using a slotted spoon, transfer the potatoes to a tray lined with paper towels, this will help to remove any excess oil. Immediately season with additional kosher salt.

While the potatoes are cooking, this is a great time to make the Bravas Sauce recipe.

Once the potatoes are all fried and the Bravas Sauce is made, you are ready to drizzle the potatoes with as much or as little sauce as you would like. If you are serving guests, you can serve with the sauce on the side so that each guest can top their own fried potatoes!
