Recipe Tip
When using fresh potatoes in a recipe, remember to drain the potatoes in a strainer. Place them back into the pan you boiled the potatoes in. Leave the burner off and gently stir the potatoes and the heat will absorb the remaining moisture.
This will prevent you from having soggy or watery potatoes!
How To Make Cheesy Potatoes (with real potatoes)
We all typically have potatoes that we need to use up. Are we right? If you want to use fresh potatoes, instead of frozen, here’s how to do it:
- Peel and dice your potatoes.
- Boil the diced potatoes until they are fork tender, typically about 10-15 minutes.
- Remove the potatoes from the heat and drain very well.
- Allow the potatoes to cool to room temperature before following the recipe card below with the remaining steps.
Ingredients Needed To Make Cheesy Potatoes
- Potatoes – you can use fresh or diced frozen potatoes. You can even use a bag of the Potatoes O’Brien that adds in diced bell peppers and onions.
- Soup – while our recipe developer used cream of chicken soup, you can substitute this out for cream of mushroom as well.
- Sour cream – if you want to be a little healthier with this recipe, replace with plain Greek yogurt.
- Cheese – this is important: use freshly grated cheese so that it melts evenly. Using pre-shredded cheese, there’s a coating that dries the cheese, out and it doesn’t fully melt.
- Butter – you can use salted or unsalted here. If using salted butter, be sure to adjust the salt amount to taste.
- Salt and pepper – potatoes just need these two ingredients. You can also use garlic salt for added flavor.
How To Make Cheesy Potato Recipe
Preheat oven to 375ยฐ.
In a large bowl, mix together the butter, sour cream, cream of mushroom soup, green onions and 1/2 c of shredded cheese.
Add in diced potatoes, and stir until combined.
Place in a pre-greased 9×13 baking dish, and top with remaining cheese.
Bake for 20-25 minutes until cheese is nicely melted.

Cheesy Potatoes
Ingredients
- 3 lbs. diced potatoes or 32 oz. bag frozen potatoes
- 1/4 c butter melted
- 1 c sour cream
- 10.5 can cream of mushroom soup
- 1/4 c green onions
- 8 oz. cheddar cheese freshly grated
Instructions
