How to Make Greek Potatoes
Preheat the Oven:
Preheat your oven to 425ยฐF (220ยฐC).
Prepare the Lemon-Garlic Mixture:
In a medium-sized bowl, whisk together the chicken stock, olive oil, lemon juice (reserve the zest for later), garlic powder, salt, and pepper until well combined.
Toss the Potatoes:
Add the 1-inch potato pieces to the bowl, tossing them in the lemon-garlic mixture until theyโre fully coated.
