Dijon roasted cabbage wedges with caraway seeds will have you looking at cabbage in a whole new light! Just about every vegetable tastes great when roasted and cabbage is no exception. The outer leaves get crispy while the inside stays buttery and soft. Add a Dijon and caraway sauce and your tastebuds will be singing!

Produce Moms Tip: If your little ones are anti-vegetable, try roasting them! Roasted veggies are almost always more palatable to kiddos than when prepared using other methods.

Cabbage Nutrition

Cabbage packs a punch when it comes to nutrients. And given how affordable it is, it makes healthy eating accessible to families on a tight budget.

Just half a cup of cooked cabbage will provide you with a third of the daily recommended dose of vitamin C. But it’s not just vitamin C that you’ll get from it. It’s also a good source of vitamins A and K, potassium, folate, iron, and fiber.

Cabbage is cholesterol-free, fat-free, low-calorie, and low-sodium. You can always feel good about enjoying cabbage!

How to Make Dijon Roasted Cabbage Wedges with Caraway Seeds

This is an easy, no-fuss recipe perfect when you need a quick weeknight side dish. Begin by preheating your oven and quartering the cabbage into wedges.

Next, whisk together Dijon mustard, avocado oil, minced garlic, salt, pepper, and caraway seeds. Brush the Dijon sauce on all sides of each cabbage wedge and place on a lined baking sheet.

Cover the cabbage with aluminum foil and bake for thirty minutes. After thirty minutes, remove the foil and bake for another ten to fifteen minutes. The cabbage leaves will begin to brown on the edges. This is your cue to remove it from the oven. You can drizzle more of the Dijon sauce on the outside of the cabbage before serving or not — either way is delicious!

Serve your roasted cabbage with pork chops, roasted chicken, grilled sausages, or veggie burgers. It goes with just about anything!
