What is Pad Thai?

Chances are you have pad Thai as takeout. However, you can make it at home with fresh ingredients. Pad Thai is a stir fry style dish that is made with rice noodles, peanuts, scrambled eggs, bean sprouts, and tossed together in a delicious Pad Thai sauce. It’s simply a comfort food in Thailand.

Variations

While the mushrooms are meaty and filling, you can also add:

  • Protein: Feel free to add shrimp, steak or chicken to your pad thai.
  • Vegan or Vegetarian: Use tofu and leave out the eggs.
  • Peanut Butter: Feel free to use any variety of peanut butter to this dish in place of peanuts for a creamier texture and sauce.

Ingredients

  • Dried goods: rice noodles, soy sauce, rice vinegar, roasted peanuts
  • Fresh Produce: garlic, bean sprouts, bell pepper, green onions, cilantro, limes

How to Make Mushroom Pad Thai

Cook the Noodles: The first step is to bring a pot of water to a boil. Add in the rice noodles and cook until tender, about 7-10 minutes. Be sure to rinse the noodles under cold water.

Sauté The Vegetables: In a skillet or wok, sautee the Monterey Mushrooms with olive oil for 8-10 minutes, until tender. Remove the mushrooms, set aside in a bowl and mix with the Pad Thai Sauce. Add the mushrooms back into the skillet with 1-2 Tablespoons of olive oil. Next, toss with the slices of red bell pepper and garlic. Allow to cook for 1-2 minutes.

Then, push the garlic and pepper to the side. Add in the eggs and scramble. After the eggs are cooked through, add in the bean sprouts, rice noodles, peanuts, soy sauce and rice vinegar. Finally, toss until combined.

Serve: Plate the rice noodle mixture and top with the Monterey Mushrooms in Thai Sauce. Garnish with cilantro, green onions and lime wedges.

To Store and Reheat

Keep any leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in a skillet or microwave in :30 second increments until heated through.

Mushroom Pad Thai

Ingredients 

  • 8 ounces flat rice noodles
  • 3 Tablespoons oil
  • 3 cloves garlic minced
  • 1 package 13.5 oz Monterey Mushrooms Sizzling Sautés™ Thai Mushroom Kit
  • 2 Tbsp Olive oil optional
  • 2 eggs
  • 1 cup fresh bean sprouts sending Broccoli sprouts – these are not available fresh locally
  • 1 red bell pepper thinly sliced
  • 3 green onions chopped
  • 1/2 cup dry roasted peanuts
  • 1 TBSP soy sauce
  • 1 TBSP rice vinegar
  • 2 limes cut in quarters
  • 1/2 cup Fresh cilantro chopped

Instructions 

  • Cook noodles according to package instructions.
  • Warm a large saucepan or wok over medium heat. Add 2 tablespoons of olive oil, if desired.
  • Add mushrooms to the saucepan. Cook for about 10 minutes, until slightly tender. Remove from heat.
  • Add the Thai sauce packet and stir until the mushrooms are evenly coated about 1-2 minutes. Set saucy mushrooms aside on a plate.
  • Add a splash of olive oil to the same pan, and toss in the garlic and bell pepper.
  • Push everything to the side of the pan. Add a little more oil and add the beaten eggs. Scramble the eggs, breaking them into small pieces with a spatula as they cook.
  • Add noodles, soy sauce, vinegar, bean sprouts, and peanuts to the pan. Toss everything to combine.
  • To assemble, serve each plate with a heap of the noodle mixture, top with saucy mushrooms, and garnish with green onions, cilantro, and lime wedges
