Ingredients Needed to Make Mushroom Vegan Tacos at Home
- Monterey Mushroomsยฎ Portabellas *
- Taco seasoning
- Olive oil
- Salt and pepper
- Taco Shells (or lettuce cups)
- Cherry tomatoes
- Avocado chunks
- Cotija cheese
- Cilantro

How to Make Mushroom vegan Tacos (Oven Version)
- Preheat the oven to 400 degrees F.
- Clean the portabellas with a damp paper towel.
- On a lined baking sheet, lay the Portabella caps. Drizzle with olive oil and season with salt and pepper to taste.
- Roast for 20 minutes.
How to Make Mushroom vegan Tacos (blackstone Version)
Start by preparing the Blackstone. Ensure the surface is cleaned, smooth and all the olive oil has burned off. Then, place the Portabella Caps on the griddle and coat in olive oil. On low heat, cook 3-5 minutes per side.
Produce Mom TIP: The mushroom caps will soak up a lot of olive oil. Be sure the portabella cap has plenty of olive oil so that it can become soft.
Next, transfer the portabellas to a bowl. Pull them apart with two forks to get that authentic ‘pulled’-look.
Once in the bowl, add in the taco seasoning and mix.
Finally, assemble your tacos with your choice of toppings.

- 2 Tbsp olive oil
- Salt and pepper to taste
- 6 taco shells hard or soft
- 1/2 cup cherry tomatoes halved
- Avocado chunks
- Cotija cheese
- Cilantro
Instructions
