How to Make Mushroom Kebabs

Whether you have picky eaters in the family or just want to bring some variety to your next meal, these Mushroom Kebabs are the recipe you’re looking for! This recipe makes three different skewers: Rainbow Kebabs, Teriyaki Kebabs, and Mushroom Caprese Kebabs. Each one is filled with unique flavors that will be loved by kids and adults alike.

You’ll need several ingredients to make all of these different kebabs. But when they’re piping hot off the grill, they’ll be so, so worth it!

Rainbow Kebabs

You’ll instantly see how we came up with the name for our Rainbow Kebabs. Each skewered ingredient is a different vibrant hue, and all of them combine to make a delectable dish. Kids will love helping in the kitchen with this one as they discover the colors of the rainbow!

Teriyaki Kebabs

Teriyaki Kebabs

The Teriyaki Kebabs feature chicken marinated in savory sauce. Baby bellas and pineapple bring the teriyaki flavor home and soak up the taste of the grill. Bring some leftover teriyaki sauce to the table for dipping! Kids love adding fruits to their meals, and they will love that flavor profile that this kebab will bring out!

Your kids a little more adventurous?  Last but definitely not least, the Mushroom Caprese Kebabs are a skewer of Mediterranean specialties. Cherry tomatoes, basil, and mozzarella back up the taste of sliced white mushrooms for a one-of-a-kind dish. The grill does something magical to each of these ingredients.

Mushroom Kebabs

Ingredients 

  • 8 oz Monterey Mushrooms® baby bellas
  • 8 oz Monterey Mushrooms® whole whites
  • 8 oz Monterey Mushrooms® sliced whites
  • 8 oz Cherry tomatoes
  • 1 Red bell pepper cut into 1-inch squares
  • 1 Orange bell pepper cut into 1-inch squares
  • 1 Yellow squash cut into ½ inch thick slices
  • 1 Zucchini cut into ½ inch thick slices
  • 1 Green bell pepper cut into 1-inch squares
  • 1 Red onion peeled and quartered
  • 1 Pineapple 1 inch cubes
  • 2 Chicken cooked, cubed, and marinated in teriyaki sauce
  • 1 handful Basil
  • 8 oz Mozzarella balls/pearls
  • 1/4 c Balsamic glaze
  • 1 c Teriyaki marinade 
  • Salt and pepper to taste
  • Olive oil spray

Instructions 

Rainbow Kebab

  • Build several kebabs using whole white mushrooms, cherry tomatoes, orange bell peppers, yellow squash, zucchini, and red onions.
  • Spray with olive oil. 
  • Place on the grill and cook until grill marks appear, flipping the kebabs once. 

Teriyaki Kebab

  • Build several kebabs using baby bellas, cubed chicken, yellow squash, red onion, and pineapple.
  • Spray with olive oil. 
  • Place on the grill and cook until grill marks appear, flipping the kebabs once. 

Mushroom Caprese Kebab

  • Build several kebabs using sliced whites, cherry tomatoes, basil leaves, and mozzarella balls.
  • Spray with olive oil. 
  • Place on the grill and cook until grill marks appear, flipping the kebabs once. Remove before mozzarella melts. 
  • Drizzle with balsamic vinegar glaze.
