No-Bake Watermelon Cupcakes: Fresh, Fun, and Festive for America’s 250th

These watermelon cupcakes are a refreshing bite to any warm, outdoor celebration. Simply slice and cut a fresh, juicy watermelon into “cupcakes,” pipe with homemade whipped cream, and top with blue sprinkles and a watermelon star for a little patriotic flair. Refrigerate until ready to serve and enjoy each hydratingly sweet bite.
Everyone loves a good cupcake, especially our kids. But during the warmer months, the last thing we want to do is turn on the hot oven.
So we did what we do best here at The Produce Moms: we used produce to create a new, no-bake treat! Watermelon cupcakes are a fresh, juicy twist on a cozy classic dessert without the baking.

America Turns 250!

When we made these watermelon cupcakes, we knew they would be perfect for July 4th this year. As America celebrates 250 years of independence, we want to celebrate with an iconic fruit. The soft pink watermelon, with the airy homemade whipped cream, and a quick sprinkle of blue says it all. And it’s the most refreshing bite on a hot day. What could be better?

Ingredients

These 6-ingredient watermelon cupcakes are fresh, easy, and quick. Let’s make sure you have the right ingredients for the juiciest cupcakes.
Watermelon
You can’t have watermelon cupcakes without a whole, juicy watermelon. It’s the star of the dish, so you want to make sure you pick the right one! When selecting your watermelon, we like to promote the Look, Lift, Turn method!
- Look the watermelon over: You are looking for a firm watermelon that is free from bruises, cuts or dents.
- Lift it up: The watermelon should be very heavy for its size. Watermelon is 92% water.
- Turn it over: The underside of the watermelon should have a creamy yellow spot from where it at on the ground and ripened in the sun.

Whipped Cream
You’ll need whipping cream, Greek yogurt, vanilla, and confectioners’ sugar for an airy and light cupcake topping that makes these watermelon cupcakes look extra gorgeous. The yogurt stabilizes the whipping cream so it lasts longer, perfect for hot days. The confectioners’ sugar helps keep that beautiful pipework on top, so your watermelon cupcakes look just like actual cupcakes.
Toppings
We used the leftover watermelon to create little star cutouts, which we stuck into the whipped cream with some blue sprinkles for a fun, festive look. You could also add berries for some extra red and blue.
How to Make Watermelon Cupcakes
From here, it’s super simple. Your summer cupcakes will be ready in 20 minutes.

Step 1: Make the whipped cream.
Whip the heavy whipping cream, Greek yogurt, vanilla, and confectioners’ sugar with a hand or stand mixer until stiff peaks form. Then, refrigerate the bowl for 10-15 minutes.

Step 2: Cut out the watermelon cupcakes and stars.
Use a knife to cut 3 to 4-inch-thick watermelon slices. Insert a large biscuit cutter or a drinking glass to make watermelon circles, place them into a lined cupcake pan, and set aside.

Use a small star-shaped cookie cutter to cut stars from your remaining watermelon and set aside.

Step 3: Assemble and decorate your cupcakes.
Next, pipe the whipped cream from the fridge on top of each watermelon cupcake. Then, top each cupcake with a watermelon star and a light dusting of blue sprinkles. Refrigerate until ready to serve!

Watermelon Cupcakes
Equipment
- Cupcake liners
- Medium to large biscuit cutter or drinking glass
- Small star cookie cutter
Ingredients
- 1 large seedless watermelon
- 1 cup heavy whipping cream
- 1 cup vanilla Greek yogurt
- ½ teaspoon vanilla
- 2 tablespoons confectioners' sugar
- blue sprinkles
- watermelon stars
Instructions
- First, whip your heavy whipping cream, Greek yogurt, confectioners' sugar, and vanilla until stiff peaks form. Then refrigerate the bowl for 10-15 minutes.
- Cut the watermelon into 3 to 4-inch slices.
- Use a biscuit cutter to cut round, cupcake-sized pieces from the watermelon slices and place each one into a cupcake liner in the muffin tin.
- Pipe the whipped cream frosting onto each cupcake.
- Cut out star watermelon pieces using a mini star cookie cutter and place one on top of each cupcake.
- Finish it off with blue sprinkles and enjoy!
