What is curried sweet potato soup?

Known for its bright orange color and bold flavors, curry soup is made with turmeric and red curry paste and cooked on low in a crockpot for a few hours. The slower cooking process in the crockpot gives you a richer, intense flavor as your soup marinates together. 

This soup recipe uses simple everyday ingredients that you can get at your local grocery store and still delivers on taste. With a hint of sweetness from the coconut milk, slight pepperiness from the turmeric, and spice from the red curry paste, your taste buds will dance with every spoonful.

Turmeric

This incredible spice is bold in color and flavor. It also has anti-inflammatory properties and is an antioxidant that protects your cells. It may even help with anti-aging, improving Alzheimer’s, and preventing cancer2. Turmeric is a bright, mustardy yellow and can be found in the spice aisle. Just a quick heads up, turmeric stains pretty much everything it touches. Try to clean up any messes as quickly as possible to prevent permanent stains.

Red Curry Paste

Despite its radiant red color, red curry paste isn’t spicy so your kids will still love this comforting soup recipe. It’s made with red chili peppers, garlic, salt, lemongrass, shallot, coriander root, and kaffir lime peel. Some pastes have shrimp paste so if you’re vegan, be sure to check your ingredient list.

And if you can’t find curry paste, you should be able to substitute 1 teaspoon of curry powder for 1 tablespoon of curry paste in any recipe. 

Coconut Milk

This is a common ingredient in curries because it adds creaminess without watering the curry down. After you mix in the coconut milk, the color will likely turn from bright red to more of an orange. Coconut milk is slightly sweet already, so we recommend getting unsweetened. The natural sweetness balances out the flavors of all of your spices.

Be sure to get full fat, canned coconut milk so the texture and flavor are on point. The liquid and the cream tend to separate in the can, so shake it really well before opening.

Peanut Butter

It’s common in Thai and Japanese dishes to use smooth peanut butter to thicken soups and curries. Smooth, natural peanut butter gives your soup the creamy and — you guessed it — smooth texture you’d expect from a curry, without any additives. 

If you accidentally buy light coconut milk (we’ve all done it), add some extra peanut butter to balance out the excess water. No one will ever know.

How to Make Curried Sweet Potato Soup

Curried Sweet Potato Soup

Toss your ingredients in your slow cooker for a ready to eat, cozy, and creamy curried sweet potato soup with lots of nutrients – even on a busy weeknight.

Ingredients 

  • 2 1/2 lbs Wada Farms sweet potatoes peeled and cut into 1- to 2-inch chunks
  • 1 medium yellow onion chopped
  • 5 large garlic cloves
  • 2 Tablespoons unrefined coconut oil
  • 1 teaspoon turmeric
  • 1/2 teaspoon kosher salt plus more to taste
  • 1/2 cup red curry paste
  • water see intructions
  • 1 can (13 oz.) full-fat coconut milk
  • 3/4 cup smooth peanut butter
  • 1 juice lime plus more to taste
  • 5 oz baby spinach (or 1 medium bunch) steamed and chopped
  • peanuts salted and roasted for topping

Instructions 

  • Add your sweet potatoes, onion, garlic, coconut oil, turmeric, and salt to a 5-8 quart sized slow cooker. Add about 1/3 cup of red curry paste and 3/4 cup of water. Stir to combine all the ingredients and cook on low for 6-8 hours. Check that the sweet potatoes are tender. You should be able to easily insert a fork. 
  • Add coconut milk, peanut butter, leftover curry paste, and 2 1/2 cups of water to your slow cooker. Stir until the ingredients are melted and mixed in with the soup.
  • Use an immersion blender to puree your soup right in your slow cooker until it has a creamy velvety consisitency. This may take a few minutes.
  • Add the lime juice and spinach and give it another stir to combine the flavors. Cook on low until the spinach is cooked down and wilted about 10 minutes. If you like your soup to have a thinner consistency, stir in more warm water. Add a little bit of warm water at a time until you get the consistency you like.
  • Taste your curried sweet potato soup and add more lime juice or salt if needed. Divide evenly into bowls and top with peanuts for garnish.
