We aren’t sure if there’s anything more comforting than pot roast! This is a great recipe to use on busy nights when you want to come home to a home smelled with dinner that is ready. The longer the meat cooks, the more tender and flavorful the roast becomes.

What type of meat is best for pot roast?
Pot roast is often made with tougher cuts of marbled beef. As it cooks, the fat begins to break down and helps to tenderize the meat.
- Chuck Roast – This is an affordable option, results in juicy meat and super easy to shred.
- Brisket – While we prefer the chuck roast, brisket is an option. It will become tender, but not as tender as a chuck.
- Round – this is a leaner cut of beef. Be careful not to overcook the round roast or it will dry the meat out.
How long to cook a roast in the slow cooker
The longer the roast slow cooks, the more tender the meat becomes. We have cooked a chuck roast in the slow cooker for as little as 6 hours and as long as over night, almost 24 hours. The bigger the piece of meat, the longer it will need.
How do you know when the roast is done?
The easiest way to know when the roast is done, is it will simply fall apart. The internal temperature is between 190°F-200°F. This high temperature helps the fat to break down, melt into the meat which leaves is tender and juicy.
Ingredients
- 3-5 lb chuck roast – you can often find chuck roast marked down in the meat department of your local grocery store
- vegetables: onion, carrots, celery, potatoes (if you don’t want to make mashed potatoes, dice 2-3 russet potatoes and add in)
- seasonings: dry onion soup, your favorite beer, beef broth
The beer helps to tenderize the meat as it is cooking. If you prefer, you can omit the beer and add 8 oz. more of beef broth.
How to Make Pot Roast in the Slow Cooker
Step 1 – Prepare your veggies. Dice all the vegetables and then place your celery, onions and carrots in the bottom of a slow cooker. Top your veggies with dry onion soup mix.
Step 2 – Add in the remaining ingredients. Next, pour a beer over the top of your veggies along with a cup of beef broth. Next, place your roast on top.
NOTE: The beer will cook off. However, if you don’t want to use a beer, simply use more cup of beef broth or water. You want to cover the vegetables and the roast.
Step 3: Slow Cook & Shred. Slow Cook on low for 6-8 hours until your roast is cooked through and tender. Using two forks, shred the roast.
Serve over mashed potatoes, buttered bread or whatever your favorite side is.
How To Store and Reheat
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
You can freeze any left overs in an airtight container for up to 3 months. Be sure that the roast thaws in the refrigerator before reheating. During the freezing process, the sauce may dry out a little bit. That is ok, simply add a little beef broth during the reheating process until you get the consistency that you want.
To re-heat, place the pot roast in a microwave safe bowl and reheat in :30 second increments. You can also place back into the slow cooker and place on warm, stirring it occasionally.

Ingredients
- 3-5 lb roast chuck
- 1 large onion diced
- 4 large carrots peeled and diced
- 4 large celery stalks diced
- 2 lipton dry onion soup mix
- 1 16 oz beer I used bud light
- 1 c beef broth or water
Instructions
- Place your celery, onions and carrots in the bottom of a slow cooker.
- Top your veggies with dry onion soup mix.
- Next, pour a beer over the top of your veggies along with a cup of beef broth.
- Next, place your roast on top.
- Slow Cook on low for 6-8 hours until your roast is cooked through and tender.
- Using two forks, shred the roast.
- Serve over mashed potatoes or with buttered bread.
