How To Make Slow Cooker Minestrone

A good soup takes time to prepare, so do this minestrone justice by breaking out the slow cooker! This recipe is an ideal dinner for a busy day. Simply prepare your Slow Cooker Minestrone in the morning or even the night before, then turn on your slow cooker before you start your day. When your family is ready for dinner, this delicious minestrone will be waiting for them!

Slow Cooker Minestrone Soup

Our Slow Cooker Minestrone makes use of a lot of hearty ingredients like carrots, onions, beans, and of course, fresh, crunchy celery. That can make for a lengthy grocery store run, which is something many of us are looking to avoid while COVID-19 is still around.

While some of the ingredients, like the celery, should be fresh when you prepare this recipe, others may be things you have stocked in your pantry. Have any cans of tomatoes or beans stashed away? This is the perfect time to crack them open — and cross them off your grocery list before you even walk in the store!

Serve your slow cooker minestrone soup for dinner with a chopped salad, warm Tuscan spinach salad, kale and tomato pasta medley, or a delicious eggplant and tomato pasta. Or, fill up a thermos and pack it for a heartwarming lunch!
