Our Slow Cooker Minestrone makes use of a lot of hearty ingredients like carrots, onions, beans, and of course, fresh, crunchy celery. That can make for a lengthy grocery store run, which is something many of us are looking to avoid while COVID-19 is still around. 

While some of the ingredients, like the celery, should be fresh when you prepare this recipe, others may be things you have stocked in your pantry. Have any cans of tomatoes or beans stashed away? This is the perfect time to crack them open — and cross them off your grocery list before you even walk in the store!

Slow Cooker Minestrone Soup

Ingredients 

  • 3 ribs Dandy® Celery diced
  • 1 white onion diced
  • 2 Carrots peeled and diced
  • 1 clove garlic minced
  • 3/4 cup green beans
  • 1 tbsp Italian seasoning
  • 1 15 oz can crushed tomatoes
  • 6 cups chicken stock *sub vegetable stock to make soup vegetarian
  • salt and pepper to taste
  • 2 bay leaves
  • 1 15 oz can cannellini beans drained and rinsed *can sub kidney beans
  • 1 zucchini diced
  • 1 cup ditalini pasta *can sub elbow macaroni
  • shredded parmesan cheese for serving

Instructions 

  • Add celery, onion, carrots, garlic, green beans, Italian seasoning, tomatoes, chicken stock, salt, pepper, and bay leaves to a slow cooker and cook on low heat for 6-8 hours or high heat for 3-4 hours.
  • Add in the cannellini beans, zucchini, and pasta and cook on high for 20 minutes.
  • Serve hot and top with parmesan cheese.

Notes

If you are using frozen or canned green beans, add them in step two instead of step one.
