How Do I Shave Asparagus?

Start by removing the tips of the asparagus and set aside to use later. Using a vegetable peeler, run the blade down the asparagus. Support the backside of the asparagus with your thumb and gently apply pressure.
You’ll get about 4-5 strips of asparagus per piece.
Do I Need To Trim Asparagus Before I Shave it?
Typically when you prepare asparagus, you want to take a piece of asparagus and bend it at the end to naturally break it. From there, you can put it back with the bunch of asparagus and trim all the rest of the asparagus with a knife.
However, with shaving asparagus, you will need the end to grasp in order to shave the asparagus. Therefore, you don’t necessarily have to trim the end for this recipe.
Can I Use The Tips of The Asparagus?
You can most certainly use the tips of the asparagus in this shaved asparagus salad. Whether you toss them with the dressing or simply add on top, the tips add to the beauty and deliciousness of this salad.
Ingredients For Shaved Asparagus Salad
- 3/4 teaspoon Lemon Pepper
- 1 1/2 tablespoons red onion, diced (also can use a shallot)
- 2 tsp garlic
- 1 c cherry tomatoes, halved
- 2 tablespoons fresh lemon juice
- 1 1/2 tablespoons sherry vinegar (or red wine vinegar)
- 2 tablespoons extra virgin olive oil
- 1 pinch kosher salt
- 2 tbsp packed shaved Parmesan cheese, to garnish
- 1 pound large North Bay Produce purple asparagus spears
How to Make Shaved Asparagus Salad
In a small bowl or mason jar, whisk together the red onion, garlic, lemon juice, sherry vinegar, olive oil, salt and lemon pepper. Set aside.
Prepare your purple asparagus, by rinsing them first. Remove the tops of the asparagus and set aside. Using a vegetable peeler, shave the asparagus lengthwise into thin strips and place in a medium bowl. Be sure to watch the video to see how our recipe developer did this.
Pour vinaigrette over shaved asparagus and stir to coat. Taste and season with additional salt and lemon pepper, as desired.
Serve topped with cherry tomatoes, additional shaved Parmesan, asparagus tips and a sprinkling of lemon pepper.
