Whipping Up Raspberry Keto Mousse

This fluffy dessert fits right into a Ketogenic diet! Rather than sugar, we used monkfruit sweetener to thicken and sweeten this mousse. Monkfruit, also called Buddha fruit or luo han guo, is a vine-grown, melon-like fruit native to China and Thailand. When juiced and processed, its sweetener can be up to 250 times sweeter than regular sugar. Best of all, it’s calorie-free!

This mousse isn’t just delicious because it’s guilt-free. With tart, juicy North Bay raspberries, it’s bursting with addicting flavor! Eat it as a breakfast, a snack, or a dessert — it’s a delight at any time of day. It’s also special enough to serve on special occasions like Mother’s Day or Valentine’s Day.

Raspberry Keto Mousse

Ingredients 

  • 1 cup heavy cream
  • 1 tbsp monkfruit sweetener
  • 12 oz North Bay Produce raspberries (2 packages)

Instructions 

  • Pour heavy cream into bowl. Begin mixing with a beater.
  • Sprinkle in sweetener and continue mixing until stiff peaks form
  • Add 6 oz (1 package) raspberries
  • Continue to mix. Berries will break down and fluff will turn pink.
  • Cover bottom of parfait-style cups or trifle-style bowls with whole raspberries. Fill to top with mousse.
  • Top with raspberries. Add mint leaf or dark chocolate shavings (optional). Serve and enjoy!
