Ingredients for Baked Brie with Peaches and Blackberries

Peaches

You’ll need 2 ripe peaches, cut into approximately 1-inch cubes.

For the best flavor, choose ripe, fragrant peaches that still have a little firmness so they hold their shape while baking. Check out our guide to how to select, store and serve peaches for everything you need to know about this summer favorite.

Blackberries

A half cup of fresh blackberries adds beautiful color along with a sweet-tart flavor that pairs perfectly with peaches.

Look for blackberries that are dark, plump and firm. If you have extra berries after making this baked Brie, check out our guide to selecting, storing and serving blackberries for more ways to enjoy them.

Brie

Use one wheel of Brie cut into cubes. Cutting the Brie instead of baking the wheel whole allows the peaches, blackberries, prosciutto and seasonings to settle between the pieces, so you get a little of everything in each scoop.

Do you need to remove the rind from Brie? Nope! The rind on Brie is edible and can be left on for this recipe.

Prosciutto

Tear 6 slices of prosciutto into bite-size pieces. Its salty, savory flavor helps balance the sweetness of the fruit and honey.

Fresh Thyme and Oregano

Fresh thyme adds an earthy flavor that works beautifully with peaches and Brie, while oregano adds another savory note.

Hot Honey

Three tablespoons of hot honey give this baked Brie a sweet finish with just enough heat.

If you prefer less spice, you can reduce the amount of hot honey or substitute regular honey.

Balsamic Glaze

A drizzle of balsamic glaze after baking adds acidity and sweetness and helps bring all of the flavors together.

Step 4: Bake for 12–15 minutes, or until the Brie is completely melted and bubbling and the edges are beginning to turn golden.

Step 5: Remove the baking dish from the oven and finish with a generous drizzle of balsamic glaze.

Step 6: Serve immediately with warm crostini, slices of crusty bread or your favorite crackers.

Make sure to enjoy this one while it’s warm—the gooey melted Brie is the best part!

What to Serve with Baked Brie

One of the easiest ways to turn this into a beautiful appetizer is to surround the baking dish with plenty of options for dipping and scooping.

Warm crostini is our favorite, but toasted baguette slices, crusty sourdough bread and sturdy crackers all work well.

You can also add fresh fruit around the serving platter. Extra peach slices, blackberries, grapes, pears or apple slices can complement the flavors in the baked Brie while adding even more fresh produce to the spread.

Can I Make Baked Brie Ahead of Time?

You can do most of the prep ahead of time, but we recommend baking the Brie immediately before serving.

Cut the Brie and prosciutto ahead of time and store them covered in the refrigerator. The peaches can also be chopped shortly before your guests arrive.

When you’re ready to serve, assemble everything in the baking dish, add the herbs and hot honey and pop it into the oven.

That way, it arrives at the table hot, bubbly and perfectly gooey.

Recipe Variations

One of the best things about baked Brie is how easily you can change it based on what’s in season.

Try nectarines instead of peaches, or substitute raspberries or blueberries for the blackberries. You can also leave out the prosciutto for a meatless version.

For a sweeter appetizer, replace the hot honey with regular honey. If you love a little extra heat, add another drizzle of hot honey just before serving.

How to Store Leftover Baked Brie

Baked Brie is best enjoyed immediately after it comes out of the oven, but leftovers don’t have to go to waste.

Allow leftovers to cool before transferring them to an airtight container. Store in the refrigerator and reheat gently until the Brie is warm and melted again.

Because this recipe contains fresh fruit and cheese, don’t leave it sitting at room temperature for an extended period.
