Baked Brie with Peaches, Blackberries and Hot Honey

2Ripe peachescut into 1-inch cubes
½cupFresh blackberries
1Wheel of Brie cheesecubed
6slicesProsciuttotorn into bite-size pieces
1teaspoonFresh thyme leaves
1teaspoonOregano
3tablespoonsHot honey
Salt and pepperto taste
Balsamic glazefor finishing
Warm crostinicrusty bread or your favorite crackers, for serving
Instructions
Preheat the oven to 400°F.
Add the cubed Brie, peaches, blackberries and torn prosciutto to a small baking dish, distributing the ingredients evenly.
Sprinkle with the fresh thyme and oregano. Season with salt and pepper to taste, then drizzle the hot honey evenly over the top.
Bake for 12–15 minutes, or until the Brie is melted and bubbling and the edges are beginning to turn golden.
Remove from the oven and finish with a drizzle of balsamic glaze.
Serve immediately with warm crostini, crusty bread or your favorite crackers. Enjoy while the Brie is still warm and gooey!

Brie rind: There’s no need to remove the rind. It’s completely edible and can be cubed along with the cheese. Choosing peaches: Use ripe, fragrant peaches that are still slightly firm so they hold their shape while baking. Make it less spicy: Substitute regular honey for the hot honey or use a combination of the two. Make it vegetarian: Simply omit the prosciutto. Fruit substitutions: Nectarines work well in place of peaches, while raspberries or blueberries can be substituted for the blackberries. Serving: This appetizer is best served immediately while the Brie is hot and melted. Make ahead: Prep the ingredients ahead of time and refrigerate them separately. Assemble and bake just before serving for the best texture.
