Smashed cucumber salad is your quickest way to a fresh side, salad, or snack. Crushed cucumbers soak up the zingy zest of the homemade lemon garlic dressing that’s ready to serve in 10 minutes or less. It pairs well with spicy dinners, grilled meats, or straight outta the bowl!

Fresh Ingredients

Cucumbers

Long English Cucumbers from NatureSweet® are the best for their cool, crisp texture. The larger cucumbers have less water than Mini or Baby cucumbers, so the salad doesn’t get watery and keeps its bite longer. Salad Toppings

The beautiful thing about salads is that every time you make them, you can add anything you want. This time we added feta cheese, fresh basil, and red onion for a Mediterranean flavor profile that’s peppery, creamy, and mildly sweet.

Dressing

Olive oil and lemon juice create the base of the dressing, with minced garlic for a spicy punch of flavor. We rounded out the fresh zing with salt, pepper, and red pepper if you want more of a kick, but totally optional. 

How to Make Smashed Cucumber Salad

Ok, now we’re at the fun part – the smashing of the cucumber salad. This is our favorite part of this recipe, and by the time everything is mixed together, you won’t feel so stressed… probably because dinner is done. But you’ll enjoy this part too.

Step 1: Smash the cucumbers.

Lay your cucumbers on a cutting board and put a rolling pin (or the flat side of a large knife) on top of the cucumbers. Use the heel of your hand to firmly press down until the cucumber cracks and breaks open lengthwise. You may need to move the rolling pin and repeat a few times if the whole cucumber doesn’t break at once.

Step 2: Chop and drain the cucumbers.

Use a knife to diagonally cut the smashed cucumbers into bite-size pieces. Transfer them to a colander over a bowl, sprinkle with salt, and let the extra water drain off for 5 minutes.

Step 3: Make the dressing.

While your smashed cucumbers drain, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and red pepper flakes (if you’re using it) in a large serving bowl, until combined.

Step 4: Toss and Serve.

Slice the red onion and add to the serving bowl. When the cucumbers are done draining, add them to the bowl and toss until lightly coated. Gently fold in the torn basil and crumbled feta and serve.

Ingredients 

Cucumber Salad

  • 2 NatureSweet® English Cucumbers
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh basil leaves, torn or roughly chopped
  • ½ small red onion, thinly sliced

Dressing

  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon fresh lemon juice (or red wine vinegar)
  • 1 clove garlic, minced
  • ½ teaspoon coarse kosher salt
  • ¼ teaspoon freshly cracked black pepper
  • pinch of red pepper flakes, optional for heat

Instructions 

  • Lay the cucumbers on a cutting board and press down firmly with a rolling pin or the flat edge of a knife until they split open.
  • Cut the smashed cucumbers into bite-sized pieces. Transfer them to a colander over a bowl, toss with salt, and let them drain for 5 minutes.
  • Whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and optional red pepper flakes in a large serving bowl.
  • Add the drained, smashed cucumber and sliced red onion to the bowl. Toss until coated with the dressing.
  • Fold in the torn basil and crumbled feta and serve immediately, or chill for up to 30 minutes before serving.
