Cucumber Salad
2 NatureSweet® English Cucumbers
½cup feta cheese,crumbled
¼cupfresh basil leaves,torn or roughly chopped
½smallred onion,thinly sliced
Dressing
2teaspoonsextra virgin olive oil
1teaspoonfresh lemon juice(or red wine vinegar)
1clove garlic,minced
½teaspooncoarse kosher salt
¼teaspoonfreshly cracked black pepper
pinchofred pepper flakes,optional for heat
Instructions
Lay the cucumbers on a cutting board and press down firmly with a rolling pin or the flat edge of a knife until they split open.
Cut the smashed cucumbers into bite-sized pieces. Transfer them to a colander over a bowl, toss with salt, and let them drain for 5 minutes.
Whisk together the olive oil, lemon juice, minced garlic, salt, pepper, and optional red pepper flakes in a large serving bowl.
Add the drained, smashed cucumber and sliced red onion to the bowl. Toss until coated with the dressing.
Fold in the torn basil and crumbled feta and serve immediately, or chill for up to 30 minutes before serving.
