How to make Turkey Meatballs and Celery with Cranberry Chili Sauce

Begin by creating the meatballs. Mix together a beaten egg, ground turkey, chopped Dandy® celery, diced onions, garlic, oregano, parmesan cheese, bread crumbs, salt and pepper. Form the meatballs using a scoop or large spoon. Meatballs should be about 1 ½ inches.

Once you have your meatballs formed, place them on a lined baking sheet and lightly drizzle the tops with olive oil. Pop them in the oven for 15-18 minutes. 

While your meatballs are in the oven, get started on the Cranberry Chili Sauce. Simply combine all the sauce ingredients in a large saucepan and cook over medium heat. Once the sugar is dissolved, simmer on low heat until the meatballs are finished baking. 

Once the meatballs are out of the oven, dip them in the sauce and place them on a serving platter. Stick a Dandy® celery half into each meatball in place of a toothpick. The additional celery adds a satisfying crunch and it makes the entire appetizer edible. Score!

Ingredients 

Meatballs

  • 2 lbs ground turkey
  • 1 Dandy® Celery Stick finely chopped
  • 1 small white onion finey diced
  • 1 clove garlic
  • 2 tsp oregano
  • 1/2 cup Parmesan cheese
  • 1 cup bread crumbs
  • salt and pepper to taste
  • olive oil to top meatballs

Sauce

  • 1 14 oz can jellied cranberry sauce
  • 1 12 oz bottle chili sauce
  • 1/2 cup brown sugar
  • 1/4 tsp cayenne pepper

Garnis

  • 1 bag Dandy® Celery Sticks
  • 1 bag dried cranberries
  • 1/3 cup fresh parsley minced

Instructions 

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  • In a medium bowl, beat the egg and add in ground turkey, finely chopped Dandy® celery, finely diced onion, a clove of garlic, oregano, Parmesan cheese, bread crumbs and salt and pepper. Mix with hands or fork until combined.
  • Use a scoop or spoon to form 1 ½ inch meatballs and place on lined-baking sheet. Lightly coat meatballs with olive oil on top. Put in oven for 15-18 minutes.
  • While meatballs are in the oven, start a large saucepan over medium heat. Combine all the sauce ingredients, stir until sugar is dissolved. Simmer on low heat until the meatballs are done.
  • Take meatballs out of oven and remove sauce from heat. Using a serving platter, dip the meatballs in the sauce to coat and place on a serving platter.
  • Chop in halves or quarters (depending on the size you want) Dandy® celery sticks and place into the top of meatballs.
  • Garnish meatballs with parsley, and garnish the serving platter with dried cranberries.
