How to Make This Delicious Recipe

Jalapeño Vinaigrette

First, whisk together jalapeños, green onions, cilantro, agave nectar, garlic, lime juice. Next, slowly drizzle in olive oil and whisk until well blended. Finally, season with salt and pepper.

Ingredients 

Jalapeño Vinaigrette

  • 2 Jalapeños seeded and minced
  • 3 tbsp green onion thinly sliced
  • 2 tbsp cilantro chopped
  • 1 tsp honey
  • 2 cloves garlic minced
  • 1/4 cup lime juice freshly squeezed
  • 3/4 cup extra virgin olive oil
  • salt and pepper to taste

Salad

  • 1 pound fresh watermelon diced
  • 12 oz tomatoes
  • 2 ears bicolor corn cooked & removed from cob
  • 1 jalapeño thinly sliced
  • 1 medium red onion diced
  • ½ cup fresh cilantro leaves chopped (a small amount reserved for final topping)
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 ounces cotija cheese crumbled (about 3/4 cup)

Instructions
