How to Make This Delicious Recipe

Jalapeรฑo Vinaigrette

First, whisk together jalapeรฑos, green onions, cilantro, agave nectar, garlic, lime juice. Next, slowly drizzle in olive oil and whisk until well blended. Finally, season with salt and pepper.

Ingredients 

Jalapeรฑo Vinaigrette

  • 2 Jalapeรฑos seeded and minced
  • 3 tbsp green onion thinly sliced
  • 2 tbsp cilantro chopped
  • 1 tsp honey
  • 2 cloves garlic minced
  • 1/4 cup lime juice freshly squeezed
  • 3/4 cup extra virgin olive oil
  • salt and pepper to taste

Salad

  • 1 pound fresh watermelon diced
  • 12 oz tomatoes
  • 2 ears bicolor corn cooked & removed from cob
  • 1 jalapeรฑo thinly sliced
  • 1 medium red onion diced
  • ยฝ cup fresh cilantro leaves chopped (a small amount reserved for final topping)
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 ounces cotija cheese crumbled (about 3/4 cup)
