Baked Mushrooms with Lemon and Gruyere

Ingredients 

  • 2 8 oz pkg Monterey Mushroomsยฎ, sliced (White or Baby Bellas)
  • 1 lemon, zest and juice
  • 3 tbsp avocado oil
  • 3 cloves garlic smashed
  • 1/2 red onion thinnly sliced
  • 1/4 cup gruyere shredded
  • salt and pepper to taste
  • 5-6 sprigs fresh thyme plus more to garnish

Instructions 

  • Preheat oven to 375 degrees.
  • Mix all ingredients in a large bowl until mushrooms are evenly coated.
  • Place ingredients in a cast-iron skillet and bake for 15 minutes.
  • Remove from the oven and garnish with additional thyme sprigs.
