Baked Mushrooms with Lemon and Gruyere
Ingredients
- 2 8 oz pkg Monterey Mushroomsยฎ, sliced (White or Baby Bellas)
- 1 lemon, zest and juice
- 3 tbsp avocado oil
- 3 cloves garlic smashed
- 1/2 red onion thinnly sliced
- 1/4 cup gruyere shredded
- salt and pepper to taste
- 5-6 sprigs fresh thyme plus more to garnish
Instructions
- Preheat oven to 375 degrees.
- Mix all ingredients in a large bowl until mushrooms are evenly coated.
- Place ingredients in a cast-iron skillet and bake for 15 minutes.
- Remove from the oven and garnish with additional thyme sprigs.
