Why does my creamer separate or look gritty after sitting in the fridge?

This is the most common question for any homemade creamer that uses real ingredients!

The Cause: Store-bought creamers use thickeners and stabilizers to keep the liquid and fats suspended. Because your creamer uses real pumpkin puree and spices, they will naturally settle to the bottom and separate from the milk.

The Fix: This is completely normal and means you are using real food! Simply give the jar or container a very vigorous shake for about 10–15 seconds right before you use it.

Can I make this creamer dairy-free?

Yes, absolutely!

The Substitution: You can easily substitute the whole milk or half & half with a non-dairy alternative. For the richest, creamiest texture, use full-fat canned coconut milk (the kind in the can, not the carton). For a lighter texture, use unsweetened oat milk or a thicker almond milk (look for “barista blend” for a creamier feel).

How long will this creamer last in the refrigerator?

This creamer will last as long as the expiration date on the milk or half & half you used to make it.

Rule of Thumb: Generally, it’s safe to use the creamer for 7 to 10 days when stored in an airtight container in the fridge. Always rely on the “sniff test”—if it smells sour, discard it.

  • 1 ½ cups whole milk or half & half (use whole milk for a lighter texture, half & half for a richer creamer)
  • 2 Tablespoons pumpkin puree (if buying store-bought, make sure it’s 100% pumpkin, not pumpkin pie filling)
  • 2 Tablespoons pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon

Directions

Combine Ingredients: Pour the milk (or half & half), pumpkin puree, maple syrup, pumpkin pie spice, and cinnamon into a small saucepan.

Heat and Whisk: Whisk the mixture continuously over medium-high heat for about 1 minute. You are aiming to warm the creamer and dissolve the spices; do not let it come to a boil.

Cool and Store: Remove the pan from the heat and let the creamer cool completely. Once cool, transfer it to an airtight container (a jar works great). Store in the refrigerator.
