Ingredients Needed to Make a Twilight Salad

  • 1 bunch kale, destemmed and chopped
  • 1/2 small red cabbage, thinly sliced
  • 1/3 c California Black Table Grapes, halved
  • 1/3 c California Red Table Grapes, halved
  • 1/3 c Red Onion, thinly sliced
  • 1/4 c walnuts, chopped
  • 1/3 c shredded carrots
  • 1/2 c Feta cheese
  • 1/4-1/2 c Balsamic Vinaigrette

How to Make Twilight Salad

Prep the Greens

Wash and de-stem the kale, then chop it into bite-sized pieces. In a large bowl, combine the kale and the thinly sliced red cabbage. If desired, gently massage the kale with a tiny drizzle of olive oil or dressing for about one minute to tenderize it.

Combine the Ingredients

Add the halved Black and Red California Grapes, thinly sliced red onion, chopped walnuts, and shredded carrots to the bowl with the greens.

Dress and Toss

Pour 1/4 cup of balsamic vinaigrette over the salad. Toss gently to ensure all the greens and toppings are evenly coated. Add more dressing, up to 1/2 cup, if you prefer a wetter salad.

Add Feta and Serve

Just before serving, gently fold in the crumbled feta cheese. This prevents the feta from crumbling too much while tossing. Serve immediately and enjoy the perfect balance of sweet, savory, and crunchy!
