A hearty Chopped Salad recipe, inspired by Portillo’s.

We love the Chopped Salad at Portillo’s. It’s forkful after forkful of delicious ingredients. A cross between and salad and a pasta dish and topped with protein, it’s more filling than many salads and is a complete meal all by itself. We created a copycat version for those time we can’t make it to Portillo’s but are craving their Chopped Salad. Introducing our Chopped Salad with Chicken and Pasta!

Just like Portillo’s Chopped Salad, our version contains romaine and iceberg lettuces, red cabbage, pasta, chicken, tomatoes, and gorgonzola cheese. We used macaroni noodles in place of ditalini pasta just because it’s easier to find at the grocery store. We left out the bacon to cut back on fat and sodium but you could add in some chopped bacon to your salad if you’d like.

Portillo’s Chopped Salad is topped with their homemade House dressing. We created a copycat version using a few ingredients you likely already have stocked in your pantry & spice rack, including olive oil, oregano, and red pepper flakes.

Chopped Salad with Chicken & Pasta (Portillo's Chopped Salad Copycat)

Ingredients 

Salad

  • 2 cups pasta cooked
  • 2 cups grilled chicken breast cooked and chopped
  • 2 cups red cabbage chopped
  • 2 cups romaine lettuce chopped
  • 2 cups iceberg lettuce chopped
  • 3 roma tomatoes chopped
  • 1/4 cup gorgonzola cheese

Salad Dressing

  • 3/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp dijon mustard
  • 1/3 tsp oregano
  • 1/3 tsp salt
  • 1/3 tsp black pepper
  • 1/3 tsp celery seed
  • 1/4 tsp crushed red pepper flakes

Instructions 

  • Cook pasta according to package instructions.
  • Combine salad ingredients and toss.
  • Make salad dressing: Combine all ingredients into a mason jar and shake well.
  • Top salad with dressing and serve.
