Grilled Bread with Pesto, Burrata, and Tomatoes

Bread, cheese, tomatoes, and pesto. There’s just no better combination in our book! This easy recipe takes just 10 minutes to prepare and 8-10 minutes to cook. If you’re short on time, you can use jarred pesto instead of making your own. While we love this recipe best on the grill, you can also make it in the oven by placing the bread direction on your oven rack. Give it a try and let us know what you think!
Grilled Bread with Pesto, Burrata and Tomatoes
Ingredients
- 1 cup cherry tomato halved
- 2 tsp olive oil
- salt
- 2 cups basil packed
- 2 cloves garlic
- 1/4 cup parmesan cheese
- 1/2 cup oil
- 1 loaf bread crusty bread such as como, cut in half lengthwise
- 4 oz burrata cheese sliced
Instructions
- Place the cherry tomatoes into a bowl pour olive oil over the top and sprinkle lightly with salt. Set aside until ready to use.
- Make the pesto by placing basil and garlic together in a food processor. Process just until garlic and basil are chopped fine. Add in the cheese. Turn the processor on and with it running, slowly drizzle in 1/2 cup of the olive oil and process until the mixture is smooth. Season to taste with salt. Set aside until ready to use.
- Preheat the grill to medium heat.
- Brush the bread with olive oil.
- Cook cut side down, for 2 โ 3 minutes or until strong grill marks form.
- Flip bread over. Spread pesto over the top. Top with sliced burrata and marinated tomatoes. Cook 1 minute. Turn the grill off. Close lid on the grill and let sit 4- 5 minutes or until the cheese slightly melts. Slice and serve.
