Preheat the Oven: Preheat your oven to 425°F (220°C).
Prepare the Lemon-Garlic Mixture: In a medium-sized bowl, whisk together the chicken stock, olive oil, lemon juice (reserve the zest for later), garlic powder, salt, and pepper until well combined.
Toss the Potatoes: Add the 1-inch potato pieces to the bowl, tossing them in the lemon-garlic mixture until they’re fully coated.
Roast the Potatoes: Spread the potatoes and all of the liquid evenly on a lined baking sheet. Roast in the preheated oven for 30 minutes, tossing halfway through, until the potatoes are golden brown and fork-tender.
