Cowboy Caviar is the perfect appetizer for any party and makes it a fantastic side dish! It is simple to make and can be tailored to your crowd’s liking. Plus, it’s always a hit for both adults and kids!

You’ll love the flavors in this dish – it’s a perfect blend of savory and sweet. And thanks to the variety of veggies, it’s packed with protein and fiber too. The only downside to serving Cowboy Caviar is that it will disappear in minutes after serving it.

What is Cowboy Caviar

Cowboy caviar, sometimes called Texas Caviar, is a mix between a black bean salad and fresh homemade salsa. It is a mixture of fresh veggies, 2 types of beans (black beans and black eyed peas), and then it is tossed with a tangy lime dressing that pulls it all together.

How Long Does it Last?

Cowboy caviar will last in the fridge for up to a week. It is the perfect make-ahead dish for your next party or gathering.

How to Store Cowboy Caviar

To store, simply place in an airtight container and keep in the fridge until you’re ready to serve. Really, it’s that simple!

Can cowboy Caviar Be Frozen?

Yes! This dish can easily be frozen. Just place in a freezer-safe container and it will last for up to 3 months.nWhen you’re ready to eat the Cowboy Caviar, let it thaw in the fridge overnight. Then, give it a good stir before serving.

Cowboy Caviar Recipe Tips

When you are ready to make cowboy caviar, plan to give it a few hours. It is best to make it at least an hour or two ahead of time. This lets the veggies and beans soak up some of the dressing and the flavors all combine perfectly.

Stir it well. We always suggest giving it a good stir before you serve it. If it has sat for more than a half hour, stir it so that the dressing that has settled on the bottom will redcoat everything.

Wait for the Avocado. We always say to wait until the last minute to add the avocado. Even though the citrus in the dressing should keep the avocado from turning brown, there is a chance that it will. While you can eat it even if it is brown, you want to serve it with that bright, beautiful, and green color.  

What to Serve with Cowboy Caviar

The most common thing to serve with the dip is tortilla chips. Similar to how you would scoop up salsa, you will want to scoop up the cowboy caviar. You can also use regular chips, crackers or even veggies like celery or cucumbers.

You can also use it as a salad topper. This is particularly delicious on top of some greens with grilled chicken or fish.

Another option is to use it as a condiment. This would be perfect on top of burgers, tacos, or nachos in place of salsa or guacamole.

Ingredients in this Cowboy Caviar Recipe

  • For the Dressing
    • ⅓ cup olive oil
    • ¼ cup red wine vinegar
    • T Tbsp garlic powder
    • 2 Tbsp lime jice
    • 1 Tbsp granulated sugar
    • Kosher salt and black pepper to taste
  • For the Salad
    • 1 10 oz Naturesweet Cherubs®, diced
    • 1 large avocado, cubed
    • ½ sweet onion, finely diced 
    • 1 (15-ounce) can black beans, rinsed
    • 1 (15-ounce) can black-eyed peas, rinsed
    • 1½ cups fresh sweet corn kernels 
    • 1 orange bell pepper, seeded and finely diced
    • 1 jalapeño, seeded and finely diced
    • ½ cup chopped cilantro leaves and tender stems

How to Make Cowboy Caviar

First, combine NatureSweet® Cherubs®, avocado, sweet onion, black beans, black eyed peas, corn, bell pepper, jalapeño pepper, and cilantro in a large bowl. Toss well so that ingredients are well-combined.

Next in a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.

Then, pour dressing over other ingredients and stir.

Keep refrigerated. If not serving immediately, be sure to toss and stir well before serving.
