We used Wada Farms Smalls Artisan Mini Potatoes. They are small and round instead of oblong, like fingerlings. The Smalls are perfect for foiled potatoes. However, you can use russet potatoes, red potatoes, or Yukon Gold potatoes. Just be sure to chop them into same size pieces, 1-inch pieces, so they cook evenly.

Can I make these ahead of time?

You can prep the potatoes, onions, and garlic up to a day in advance. Store the mixture in a sealed container in the refrigerator and assemble the foil packets right before cooking.

Do I need to poke holes in the foil?

No, you do not need to poke holes. The sealed foil packet steams the potatoes, making them perfectly tender.

  • 1 bag (24 oz) Wada Farms small potatoes, quartered
  • ½ yellow onion, diced
  • 3-4 cloves garlic, minced
  • 2-4 tablespoons olive oil
  • Salt and pepper, to taste
  • Butter (optional)

Instructions

Preheat your oven to 375°F (if baking) or your grill to medium-high heat.

Tear off a large piece of heavy-duty aluminum foil. For extra security and to prevent tears, you can double up the foil.

Start by washing and drying your potatoes. Quarter each potato, ensuring they are all the same size so they cook evenly.
