Even those of us working from home find ourselves with hardly a free moment to fix up a hot dinner. That’s why we love our instant pot – it makes dinner so much easier! This Instant Pot Chicken and Potatoes recipe is perfect for those nights when your family is home from a busy day and hungry for a filling, delicious meal.

Total Time20 minutes
Servings4 servings

  • 4 boneless, skinless chicken breasts
  • 2 lbs Wada Farms baby gold potatoes quartered
  • 3 tbsp olive oil
  • 1 clove garlic
  • 1 tsp dried basil
  • 3 tbsp Ranch seasoning
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 3 tbsp grated parmesan cheese

  • In a bowl, toss potatoes and chicken in olive oil.
  • Season with salt and pepper to taste.
  • Mix together, garlic, dried basil and 1 tablespoon of Ranch seasoning. Sprinkle over the chicken and potatoes as evenly as possible.
  • Add chicken broth to the instant pot or pressure cooker. Place the lid on in the locked position and turn the vent to the sealed position. Set to “pressure cook” for 15 minutes.
