Strawberry Salad Kabobs with Avocado and Spinach

Ahh…fresh strawberries. There’s really nothing quite like the sweetness you get when you bite into a perfectly ripe one. That flavor is the essence of summertime. May is an important and exciting month in the produce world. It is both National Salad Month AND National Strawberry Month, so we’re combining the two celebrations into one delicious recipe.
Strawberries are one of our favorite fruits because they go way beyond their terrific taste. These beautiful red berries are heart healthy, high in vitamin C,ย and an excellent source of manganese. Beyond that, studies have shown that strawberries aid in healthy digestion and even help prevent strokes.
Although strawberries are definitely the star of this particular salad show, we’ve included avocado and baby spinach to fully round out the kabob. Avocado and strawberry pair well together to create a creamy, sweet taste profile and the spinach adds the pleasant crunch we all expect in our salads.
How to Make Strawberry Salad Kabobs
Making these salad kabobs is simple. After all of your items are prepped and ready, it’s time to build your kabob. Start by adding one strawberry, followed by an avocado wedge, a roll of baby spinach, and one more strawberry to cap it off.
We love poppy seed dressing with this kabob, but feel free to try any dressing you like. Or, you could make your own like this Blood Orange Vinaigrette or Raspberry Vinaigrette.

Strawberry Salad Kabobs with Avocado and Spinach
Ingredients
- 8 strawberries washed and trimmed
- 1/2 avocado cut into wedges
- 1/2 cup baby spinach
- 2 tsp lemon juice
- 3 tbs poppy seed dressing
Instructions
- Start by washing and trimming the strawberries and cutting the avocado. Toss the avocado wedges in the lemon juice to prevent browning.
- Assemble the kabobs by placing one strawberry on first, followed by an avocado wedge, baby spinach, and one more strawberry.
- Serve with your choice of dressing.
