Raspberries are delicious on their own, but also work extremely well when blended into a vinaigrette salad dressing! A fruit-flavored salad dressing can turn any normal salad into an incredibly delightful meal.  One cup of raspberries is only 52 calories, offers 7 grams of fiber (more than a bran muffin!), and is rich in vitamin C and antioxidants.

Raspberry Vinaigrette

Ingredients 

  • 1 pint raspberries
  • 2 cloves garlic peeled & minced
  • 1 shallot peeled & minced
  • 1/4 cup white balsamic vinegar
  • 3/4 cup olive oil extra virgin
  • salt and pepper to taste

Instructions 

  • Put the raspberries and white balsamic vinegar in a blender and puree until smooth.
  • Pour into a bowl and whisk in the garlic and shallots.
  • Slowly drizzle in the extra virgin olive oil, whisking constantly.
  • Season with salt and pepper.
