This week’s Produce Mom Pick is Raspberries!

Raspberries are delicious on their own, but also work extremely well when blended into a vinaigrette salad dressing! A fruit flavored salad dressing can turn any normal salad into an incredibly delightful meal.  One cup of raspberries is only 52 calories, offers 7 grams of fiber (more than a bran muffin!), and is rich in vitamin C and antioxidants.

Instructions
  1. Put the raspberries and white balsamic vinegar in a blender and puree until smooth.
  2. Pour into a bowl and whisk in the garlic and shallots.
  3. Slowly drizzle in the extra virgin olive oil, whisking constantly.
  4. Season with salt and pepper.
