Roasted Rainbow Cauliflower: An Easter Treat!
Easter is just a few days away and I have the most amazing recipe to add to your Easter menu! Roasted Rainbow Cauliflower is a dazzling dish. The vibrant hues of the cauliflower will add a burst of spring color to your Easter dinner table. No matter what you’re making as the main dish — ham, lamb, or chicken — this dish pairs perfectly with them all.
Not only is this dish gorgeous, it’s mouth-wateringly delicious! It’s a favorite of kids and adults alike. Even if your child has turned down cauliflower before, the rainbow colors of Salad Savoy’s Carnival® Multi-Color Cauliflower are too fun and enticing to turn down.
Can I just take a sec to rave about Salad Savoy? Salad Savoy is a trusted Produce Mom Partner because of the outstanding produce they grow—all of which is visually stunning and tastes as amazing as it looks! Salad Savoy truly is the “home of color, taste, and nutrition.”
But let’s get back to the Carnival Multi-Color Cauliflower. Wondering how Salad Savoy gets their cauliflower deep purple, vibrant orange, and rich green? Don’t worry—there are no dyes involved! All the colors are the result of natural breeding techniques that have been used in horticultural fields for generations. Salad Savoy items are not genetically modified. The bees do most of the work!
To make Roasted Rainbow Cauliflower, you’ll need 6 ingredients — most of which you probably already have in your kitchen pantry. The prep work takes about 10 minutes and simply consists of cutting up your cauliflower and mixing your ingredients together.
To cut up your cauliflower, first remove the main stem with a sharp knife. Then, remove florets by cutting at the base of each smaller stem. When cutting larger florets into smaller ones, be sure to cut through the stem to keep the cauliflower intact. On some pieces you can use your fingers to snap the cauliflower apart. If you’ve never cut your own cauliflower florets, no need to panic! It’s easy and fairly intuitive. Once you get started, you’ll see how natural the process is.
Wait to wash the cauliflower until after you’ve cut it up. It’s much easier this way!
Once the cauliflower is cut into florets, simply toss them with the other ingredients. Then you’re ready to roast! Bake at 425 degrees for 25-30 minutes. Don’t forget to turn the cauliflower half way through to make sure it roasts evenly.

Carnival Multi-Color Cauliflower isn’t the only visually stunning produce items Salad Savoy grows, so be sure to look for all their products at your grocer. If you don’t see their products in the vegetable section, be sure to ask your produce manager for it.
Not too many kids I know would consider any cauliflower a ‘treat’ , unfortunately.
