  • Select star fruit with a pale green to bright yellow color with slightly browned edges. Avoid deep green, unripe fruit and overripe fruit with dark brown edges.
  • Look for star fruit with a smooth texture that is firm but not hard. A ripe star fruit should yield to some pressure. Unripe star fruit will have a rougher texture, while overripe star fruit will begin to grow soft.
  • Starfruit skin is edible. Simply wash, slice, and enjoy!

How To Store Fresh Star Fruit: Store fresh star fruit at room temperature on the counter or, for better results, in a cool, dark place with good airflow. Star fruit will ripen after picking. A ripe star fruit will keep on the counter for up to 1 week, while a slightly unripe one will keep for up to 2 weeks. You can also extend the life of your star fruit by refrigerating it in the crisper drawer, where a ripe star fruit will keep for 2 weeks and an unripe one for 4 weeks. Avoid washing the star fruit until you’re ready to use it.

How To Freeze Star Fruit: Cut the star fruit into cross sections, making star-shaped pieces about 1/2 inch wide. Slice off the brown tips of the stars, the spread the stars out on a baking sheet with space between each piece. Flash freeze for 3 to 4 hours or until solid, then transfer to a plastic bag or airtight storage container for long-term storage.
