Winter Salad Recipe Ingredients

This six-ingredient winter salad is made with fresh produce that you can easily find at your local grocery store. Since we’ll be relying on the natural flavors of our ingredients for our winter salad recipe, it’s important to select each item at peak freshness.
Arugula
Many winter salads use a hearty green for the base of the salad. But we love using arugula for its spicy, nutty flavor that you crave in a winter salad while still being light on the stomach. Look for arugula that is bright green in color. The leaves should be about 3 inches long and feel firm and crisp. Avoid packaging with excess moisture for a longer shelf life.

Dandy® Celery and Radishes

Pomegranates
To save time, you can buy a container of just the pomegranate arils. From there, you measure the arils and pop them onto your winter salad. If you can’t find the container of arils, you can also buy a pomegranate and remove the arils yourself. Again, we like convenience, so we prefer the container. But both options offer you fresh, juicy little salad jewels that make this salad look extra gorgeous and festive.

Goat Cheese
It’s always fun to have something creamy in a salad. Tangy goat cheese pairs well with the crunchy celery and radishes and juicy pomegranate arils for a well-rounded bite of your winter salad.
Champagne Vinaigrette
We’re goin’ with the flow of convenience, so this time we used a store-bought bottle of champagne vinaigrette to cut down on prep time. If you’d like to make your own, go for it! The champagne vinaigrette adds a slightly sweet, delicate, and elegant layer of flavor.
How to Make a Winter Salad
Remember, this fresh salad is pretty much a toss-and-serve winter salad recipe. So let’s get to tossing!

Step 1: Mix arugula and celery.
Quickly rinse your arugula, dry it with a clean kitchen towel, and add it to a medium mixing bowl. Use a knife to thinly slice the celery into C’s and add it to the bowl of arugula.

Step 2: Drizzle champagne vinaigrette.
Drizzle the arugula and sliced celery with the champagne vinaigrette and toss with salad tongs or large mixing spoons, until everything is lightly coated and glistening.

Step 3: Sprinkle with winter salad toppings.
Top your winter salad with Dandy® radishes, pomegranate arils, crumbled goat cheese, and salt and pepper. We like to serve it with all of the toppings on top for a beautiful, festive winter salad before everyone starts digging in, but feel free to mix it beforehand if you’d like.

Make it a meal → To make this salad a meal add rinsed chickpeas for a no-cook protein. If you have extra time, add grilled chicken or shrimp.

Winter Salad with Celery, Radish, Pomegranate, and Goat Cheese
Ingredients
- 10 oz baby arugula
- 2 cups Dandy® celery thinly sliced
- 1½ cups Dandy® radishes thinly sliced
- 1 cup pomegranate arils
- ¾ cup goat cheese crumbled
- 4 tablespoons champagne vinaigrette
- salt and pepper to taste
Instructions
- In a large bowl, add the arugula and thinly sliced Dandy® celery. Mix to combine.
- Drizzle with champagne vinaigrette and toss to coat.
- Add in the thinly sliced Dandy radishes, goat cheese crumbles, pomegranate arils, and salt and pepper to taste. Then serve!
