What is a Roux?

A roux is a thickening agent made from equal parts flour and fat, usually butter. It serves as the base for many sauces, soups, and stews, helping to create a smooth and creamy texture. In this chicken pot pie recipe, the roux helps thicken the filling, making it rich and flavorful.

How to Make a Roux

  1. Melt the Fat: In a saucepan, melt your choice of fat (butter is commonly used) over medium heat.
  2. Add the Flour: Once the butter is melted, add an equal amount of all-purpose flour. For our recipe, thatโ€™s โ…“ cup of each.
  3. Stir Constantly: Whisk the mixture continuously for about 1-2 minutes to cook off the raw flour taste. The mixture should turn a light golden color.
  4. Use in Your Recipe: Gradually whisk in liquids (like chicken broth and milk) until smooth.
