Pear and Blue Cheese Tarts

If you haven’t enjoyed the flavor combinations of pears and blue cheese, it’s a must try! It’s truly divine. The salty, creamy, strong flavors of blue cheese paired with the sweetness of the pear, along with the flakiness of the puff pastry and the crunch from the walnuts, your taste buds will crave more! You’ll get sweet, salty and savory in every bite!

Take the extra few minutes to caramelize the pears. You won’t regret it! It simply makes all the difference in the world by softening the pears up and allowing them to soak in the juices of the brown sugar.

Ingredients for Pear Blue Cheese Tart Recipe

  • puff pastry
  • 2 Sage Fruit Bosc Pears
  • unsalted butter
  • brown sugar
  • egg
  • blue cheese – if you don’t enjoy the flavors of the blue cheese, you can substitute with crumbled feta or goat cheese
  • walnuts – you can also use pecans, almonds or even macadamia nuts if you prefer

How to Make a Pear Blue Cheese Tart

Preheat the oven to 350°. Line a baking sheet with parchment paper.

Slice the pears, and set aside. Note: Watch the video below on how to slice a pear without a lot of waste!

In a saucepan, melt the butter. Once the butter has melted, add in the pears and brown sugar. Stirring to coat the pears with the mixture. Allow to cook for about 5 minutes or until the pears have softened and the pear juice has mixed in with the syrupy liquid.

Place the puff pastry on a baking sheet. Cut it into 4 equal pieces. Score a “border” on the outside of the puff pastry, ensuring not to cut all the way to the bottom. This will allow the puff pastry to “puff up” on the edges. It’s okay if it’s not perfect!

Brush the border of the puff pastry with egg wash. This will help to prevent it from burning. You’ll want to go lightly so that the pastry puffs up.

Place the pear mixture into the center of each piece of the tart, keeping within the border. You’ll want to use a spoon and drizzle the syrup over the puff pastry.

Bake for 20-25 minutes until golden brown. Remove from the oven. Allow to cool for about 5 minutes and add the walnuts and blue cheese. If you have any remaining syrup leftover, you can top the tart with it!

Notes for Making Pear and Blue Cheese Tarts

  1. When cutting the puff pastry, you want to take a large knife and press down, lift up and press down the line. Dragging a knife through the puff pastry won’t allow the layers to puff up as it will “stick” the layers down.
  2. If you accidentally cut through the border don’t worry about it. It’ll fix itself during the baking process.
  3. Don’t soak the border with the egg wash. Doing so will act as a binding agent and won’t allow the puff pastry to do it’s thing of actually puffing up!
  4. When slicing the pears, run your knife down the pear (as shown in the video) and as you get to the center of the pear, cut your knife into the pear to get the seed and membrane out. If you still have some left after slicing, make a “V” into the pear and remove.
  5. If using untoasted walnuts, place the walnuts on top of the pears with about 5 minutes remaining on the tart to bake.
