You’ll need three components to make these stuffed dates with blueberries. Then, you’ll be ready to stuff and serve.

Dates

Dates give this delicate appetizer a sturdy base. As they dry, they develop a sweet, caramel-like flavor. The longer they dry, the sweeter they are. Different batches can vary in sweetness, but their chewy texture creates the perfect bowl shape for stuffing.

Mascarpone Cheese Filling

The creamy, tangy mascarpone filling is super easy to throw together. You’ll need mascarpone cheese, fresh lemon juice, and honey—that’s it! If you can’t find mascarpone cheese, try cream cheese, which is available in any grocery store. Goat cheese also pairs well with blueberries.

How to Make Blueberry Mascarpone Stuffed Dates

Now, let’s make the lemon honey mascarpone filling and stuff those dates.

Step 1: Prep the dates.

You can buy pitted dates to cut down your prep time. But if your dates aren’t pitted, use a knife to cut lengthwise down the date and remove the pit. Set your pitted dates to the side while you make your stuffed date filling.

Step 2: Make the mascarpone filling.

The fastest method is to use a spatula to mix the mascarpone cheese, honey, and lemon zest in a small mixing bowl. If you want an extra light and airy filling, let the mascarpone come to room temperature and then whip the filling ingredients together. But we usually make it the fast way!

Step 3: Fill the dates.

Use a small spoon (about 1-2 teaspoons) or a piping bag to fill each pitted date. We like the spoon method because it’s quicker and requires less cleanup. But if you are making these for a party appetizer, a piping bag will make them look uniform. Both methods work great.

Don’t forget the blueberries. Be sure you rinse and gently dry your blueberries with a paper towel, then top each stuffed date with a blueberry. Then serve!

Blueberry Mascarpone Stuffed Dates

These stuffed dates are filled with a creamy honey lemon mascarpone filling and topped with premium blueberries. Juicy, sweet, tangy, and chewyready in just 15 minutes!

Ingredients 

  • 16 medjool dates
  • 4 oz mascarpone cheese
  • 2 !tbsp honey
  • ½ Zest of a lemon
  • North Bay Reserve Blueberries
  • Cinnamon to dust

Instructions 

  • Make a cut the length of the date and remove the pit. Place pitted dates on a plate and set aside.
  • In a small bowl, mix the mascarpone cheese, honey, and lemon zest with a spatula until combined.
  • Using a small spoon or piping bag, stuff the dates with the mascarpone filling (about 1-2 teaspoons per date).
  • Top each date with a North Bay Reserve Blueberry, dust with cinnamon, and voilá, it's ready to serve!
